What Are You Having For Breakfast Tomorrow Morning?

If you are as tired of oatmeal, toast or granola as I am, then you’re going to love this wonderful breakfast casserole recipe I’m about to show you!

This recipe certainly does have a Southern flair to it, though its hearty flavor can be enjoyed by people of all backgrounds, I think. This sausage biscuits & gravy casserole is simple to put together, too! And I guarantee; once you’ve tried this, there’s no going back to your old morning routine.

Though I don’t indulge in breakfast often, at least not during the standard breakfast hours, my Deep South background certainly gives me plenty of tasty options when I want to do so. A good number of them don’t require much toiling in the kitchen at all, and some can even be cooked the night before and easily re-heated the next day, with no compromise in flavor. This savory casserole is just such a recipe.

The great thing about this casserole is that you can also serve it for lunch or dinner. I like to make a large enough batch to have some leftovers – in my opinion, this dish only gets better when reheated!

You Won’t Be Able To Put Your Fork Down!

The in-laws called my husband and told him that they were going to be coming up for a visit over the weekend. You know what that means, don’t you? Time for me to start cleaning. Not that they could care less about how tidy the house looks, but I do! I also had to make sure that the guest room was all set up, and we had plenty of groceries. My mother-in-law refuses to go out to eat most of the time. She will do the cooking at my house before she lets us go and get something from somewhere else. I knew that there was one dish that I was going to make on the Saturday morning that they were at our place.

I had seen a recipe for a brunch pie on Mennonite Girls Can Cook earlier in the week, and I had already planned on making it before I even knew that they were coming. It was the perfect homemade dish that my mother-in-law would go crazy for. What was nice is she even helped me make it.

It’s always fun to bond with her in the kitchen. She has so many tips and tricks when it comes to cooking, I’ve learned a lot from her. The pie turned out amazing, and even with the veggies in there, the husbands and kids still ate it. Surprising to me, but it happened!

When my husband and I first bought our house and started having babies, many years ago, we went out to eat way more than what I would like to admit.

It was just about every other night, we were grabbing something from a drive-thru, having a pizza delivered, or going up to the local family restaurant to let them cook for us. It wasn’t my proudest moment I can tell you that much. However, life was too busy, and by the time it was time to eat, the last thing that I wanted to do was go stand in the kitchen for an hour making dinner. It just wasn’t in me at the end of the day.

My husband often requested Mexican food when we went out to eat, and I could tell that it was his favorite. When I was able to cook, he also loved my cooking, so I wanted to see if I could recreate any of his favorite dishes at home. That would be a real treat!

I couldn’t wait to surprise him with these homemade chicken burritos. They were super simple to make, and I thought they smelled amazing. The only thing that we had to wait for was the hubby coming home from work to be the official taste tester of the night.

Some might say that this a soup for a cold, dreary day. I digress. Cauliflower and sweet potato soup makes a marvelous meal on any day. it’s hot, filling, and hits the spot when you have a growing pit in your belly. What’s even better is that almost everyone adores eating it. My kids really enjoy this recipe.

 

If you have a  hard time getting picky eaters to consume their veggies, you need to make this soup. Adding in the sweet potatoes is a game changer. You can still taste the cauliflower but the sweet potatoes add a lot of sweet, creamy texture to the mix. This si one of those recipes that I always keep handy, especially when i need to throw together a quick slow cooker meal.

I love eating Mexican food as it’s one of my favorite cuisines. Tacos, enchiladas, and tortillas seriously make my world go ’round. So, you can imagine my delight when I stumbled upon this amazing Mexican casserole. It has everything in it that a burrito-loving gal, such as myself, could ever want in a baking dish.

 

Enchilada sauce enraptures spicy chicken breast, black beans, salsa, and savory herbs in this one-dish supper. Your family will be doing backflips all the way to the table. This casserole serves 4-6 people so I always make a double batch for my brood of 5 (we’re big eaters). The recipe calls for Mexican shredded cheese but I’ve used sharp cheddar before and it turned out just fine.

If you’re anything like me, you probably cook way too much food during the holidays or for an event. Last Easter I cooked a 15-pound roast for seven people, four of which were children. So yep, there sat a gigantic slab of ham taking up massive amounts of valuable room in my fridge. What to do? Make a cheesy hashbrown ham casserole of course! This is a hearty meal that the fam absolutely loves. I mean, seriously, it has ham, hash browns, and cheese in it. What’s not to love?

This delicious concoction of TASTEE goodness is so incredibly easy to put together. Chop up the ham, toss in some cheese, and empty a bag of frozen shredded potatoes into a casserole dish and that’s basically it! Easy peasy, my friend. After about an hour in the oven at 350-degrees, you’ll be savoring the luscious tastes of this soul-pleasing food.
