Savory And Delicious Comfort Food: Cashew Chicken

Everyone has those meals that are go-to meals for when you need something really delicious in a hurry. This savory cashew chicken is perfect for just such an occasion. It’s succulent and juicy chicken with water chestnuts and green bell peppers. Everything is topped with a juicy and delicious sauce flavored with the traditional soy sauce and the spicy sweet oyster sauce.
The best part of this meal is that it comes together in a snap! Once you mix the sauce ingredients together, cook the chicken while chopping up the vegetables. It’s also just long enough to cook up some Lo Mein noodles to serve with the cashew chicken.
The tender chicken is cooked in the delicious sauce for a couple of minutes, so the chicken absorbs the flavor of the sauce. Combine this with the water chestnuts, bell pepper and crunchy cashews, it’s a definite winner!

So many Creole and Cajun dishes make for great comfort food, but they are all really complicated and take forever, right? WRONG! With this Creole Jambalaya recipe, you can bring all of the savory, rich flavors of Louisiana into your home in under an hour. It’s great and easy enough for a warm, everyday family dinner but also a fantastic idea for your next tailgate or potluck!

Though I don’t think that the Gulf Coast is quite as different from the rest of Mississippi as some people say, there is no denying that that proximity to New Orleans has had an effect on the locals’ food choices. Though I live a good bit north of the Coast now, after a few rainy days in this small college town, such as we have had here recently, my Deep South roots really come out in some of my comfort food cravings. I have so many fond memories of Mother slaving over a richly aromatic seafood gumbo…even on a summer day, when it was storming outside, I loved to curl up under a blanket with a full bowl of gumbo and feast on its delightful smells and beautifully mixed, spicy Louisiana flavors.

I didn’t really feel up to a full day in the kitchen, though, and let’s face it:  making a good gumbo can be really hard and time-consuming. Thankfully, there are recipes like this delicious Creole jambalaya that can be made in under an hour and still offer all of that uniquely comforting, gourmet New Orleans-style Deep South flavor to your dinner table in under an hour. (I ate plenty of jambalaya growing up, too.)

Great for when you want a healthy, relatively low-cal, filling homemade meal but are just too busy to spend all day standing over the stove.

I just love a good stew, don’t you?  Done right, it is something light and flavorful enough for a summer lunch and yet rich and soothing enough to warm you up on the chilliest winter nights.

Mother, God rest her sweet soul, frowned on using crock pots.  She insisted on doing everything the good old-fashioned way – and did it brilliantly.  But crock pots have their uses:  Do a small bit of prep the night before; drop all of the ingredients into the pot, plug it in, and just forget about it for eight hours.  By the time evening rolls around, with no further effort on your part, you have a nice, healthy, homemade meal.

The best EVER potato dish – and super simple, too!

I absolutely love au-gratin potatoes I will order them by default anytime I am at the steakhouse. Most of the time, though, they are considered a side dish – but it doesn’t have to be that way! This recipe has a unique twist.

If you’re like me, you’d be happy to have just au-gratin potatoes for dinner, seven days a week, and you wouldn’t get tired of them! With this recipe your family might not think you’re crazy anymore, because you can now amp up the side dish and turn it into your main course. Not only do these potatoes have the normal cheese and somewhat normal bacon, but these also have full boneless skinless chicken breasts which actually turns this in to a complete meal.

Not only is this easy but with the addition of the boneless skinless breasts it is relatively healthy as well. This would be perfect for your next pot luck or tailgate party. Please let us know how yours turns out and as always please share with all of your friends.

Hands up, everyone, if you like Snickers! Two hands up right here, because I could not imagine my life without it. When I was a kid I used to hate Snickers. I’m not exactly sure why; I did love all kinds of chocolate but Snickers just was something I couldn’t stand. But you know when you grow up, your taste buds kind of grow up, too! These days I grab a Snickers 9 times out of 10, if I’m going to get a chocolate bar in the first place.

So trying this recipe was an absolute must for me. How can you go wrong with Snickers ice-cream bars made into a cake! You can’t, honestly. This is also surprisingly easy for such a complex looking and tasting dessert. It presents itself really well for your next summer party or backyard family BBQ. Your guests wont believe you made it! Especially if you eat it all before they even arrive…

Chicken tenders are the favorite of many, but sometimes these fried little things kind of feel a little too heavy. If you’re trying to live a healthier, lighter lifestyle, it doesn’t mean you have to give up on all the good things in life! This is a healthier way to make chicken tenders, and I promise you it’s so simple you hardly have to lift a finger. These Parmesan Chicken tenders are so moist and juicy! The coating on them is amazing, and I’ll tell you why.

Obviously because of the Parmesan, but also because of the cornflakes. This creates a very unique flavor that my whole family enjoyed. They can also be made in bulk and re-heated rather easily. These are much healthier than the fried ones – besides, you get to tweak the recipe a little by choosing a different cheese, for example Romano or Asiego.
