This Tuna Swiss Melt Casserole is a nice twist on the traditional tuna casserole and makes for a great, quick, and easy midweek meal!

 

I may have been in the minority of people growing up who actually enjoyed tuna casserole. Maybe it’s just my Gulf Coast upbringing, loving everything from the sea. Even I have to admit that the classic recipes like this can get a bit tired after a while, though. Adding Swiss cheese and tomatoes to the mix makes for a nice upgrade, I think. Swiss cheese is one of those “happy medium” cheeses that has a distinct flavor without being too overpowering, and it actually takes on more depth of flavor when melted. The result: a really creamy casserole with a topping that nicely complements the natural flavor of the tuna. Just make a side salad, and you have a filling, soothing, well-balanced full meal–with minimal effort. Yummy!

The sooner you make this casserole the better!

If the pizza casserole is a nice taste of southern Italy, this Parmesan Chicken is a nice, easy-to-make taste of northern Italy. It’s a satisfying recipe, with only six ingredients (including the seasoning) and a 9″ x 13″ baking dish needed to put it together.

On top of it all, you can have it ready in under an hour! Now, that’s what I call the perfect weeknight meal – especially if you are trying to balance work, kids, school, chores, and still want to serve your family a hearty meal.

If you want something easy to make, with a decent amount of cheese (but not TOO much) and with a creamy sauce, give this chicken parmesan casserole a try. Dicing up the chicken may be a little bit of work, but it really shortens the baking time, and everything after that is super-simple and low-hassle. You’ll have no trouble putting this together even at the end of a rather hectic midweek day.

If you are looking for something low-hassle to put together for a midweek dinner, this Easy Pizza Casserole is a good option. It’s simple to put together and bakes in under half an hour. It’s also easily expanded, if you want to use it for something like a large potluck. It doesn’t get much easier than seven ingredients and a sub-half-hour bake time. If your family likes pizza, they’ll enjoy this casserole.  As-is, it makes six to eight servings.

 

Of course, if you need more than that, you can readily double, likely even triple, the recipe without too much trouble. It also happens to be rather versatile. You could make this twice a week with small alterations, and it’ll be like a whole new dish!

These Chicken & Broccoli Stuffed Shells make for a rather filling and well balanced meal, and you can make them well under an hour and on a budget–for roughly $9.25 for six servings. That makes it perfect for those rather strained and hectic weeknights.

I enjoy my chicken and pasta dishes, but I am an especially big fan of both when I am on a bit of a tight budget or pressed for time. They combine nicely with cheese and a good helping of veggies in this simple but hearty casserole.
