Here’s Your Quick Fix To Midweek Madness

Don’t you just love it when you suddenly come across a recipe that basically saves your life that day? It happened to me last week, when I was having one of the worst days ever. I was down with a horrible cold but I couldn’t just stay and rest, because I had to make a deadline and I wasn’t going to slip, unless I died and they didn’t have wi-fi in the grave.

Ok, maybe I was being a little over-dramatic there. But the point is, I was feeling miserable, I didn’t have any extra time, and I couldn’t even think of leaving my house and going to the store. If I had, I probably would have ended up being arrested. Trust me, I looked that bad.

Right then and there something magical happened. I was on Facebook (isn’t that what everyone does when they’re extremely busy with an insane schedule and no time to waste?) and someone had just shared this incredible recipe. With glazed eyes I wrote down the ingredients and immediately realized I wasn’t going to die that day! In fact, I was going to make dinner for the fam, in the middle of all the chaos!

This chowder will cure all the worries in the world.

We have a friend who has made it his life’s mission to never miss a barbecue day during the summer. That means he wants to make every single summer dinner outside, on the grill, rain or shine.

There’s nothing wrong with that and I really admire his dedication, but I have to say I probably wouldn’t be able to do the same. I just can’t make myself stand by the grill if it rains, and that’s why I always have a “Plan B” for dinner, just in case.

We’ve had surprisingly many rainy days this summer, where I live, so I’ve been going through my rainy day recipe box a lot lately. It’s filled with soups, stews, crock pot meals and other things that make you will warm and cozy, when it’s thundering outside.

I wonder if anyone else has collected recipes for this purpose, or if I’m the only one? Anyway, this is the recipe I chose from that box earlier this week. It turned out amazing!

This Tasty Salad Will Easily Feed A Crowd!

Whenever I’m throwing a party I always struggle trying to find a simple, inexpensive dish that will feed a large crowd.

I love all kinds of tiny appetizers, but I’ve noticed the ingredients can be on the expensive side. And quite often they are also pretty time consuming to put together. Lately I’ve started to turn more towards nice, festive salads and they have proven to be a hit every time. So that’s what I had in mind when I started searching for a new recipe for an upcoming get-together.

This Mexican-style pasta salad is a winner! It won’t brake the bank, and the recipe makes 16 servings (which is plenty, even if your guests are going for seconds – which they will…) This salad would also make a great lunch on its own, when served with some fresh baguette and garlic butter. Bring some Mexican flavors to your next party!

They make for the perfectly crispy, and crunchy crust that just adds to the taco-like feel of the dish.

This delicious cheesy casserole, takes out some of the guilt of making tater-tots your main staple at dinner time.

And trust me…you won’t hear ANY complaints from the kids, on this one.

Once you taste this dish, you’ll be thinking up all sorts of ways to eat those favorite tots.
