Stop! Don’t you dare throw those Thanksgiving leftovers away!

Not that I thought any of you would ever do such a crazy thing. I mean, how wasteful would that be? Very! However, there is a dilemma that we all face each year after the big holiday dinner and that is all the leftovers.

What the heck do we do with all of those leftovers?! I mean, you can only eat turkey for so many meals after the fact. My mother used to make a big old pot of turkey noodle soup and it was delish! However, that didn’t tackle the issue of the side dish leftovers.

I’ve found a recipe over on the Dining With Alice website that does tackle this beast. Good ‘ol Alice is quite a gem in the kitchen and she came up with a Thanksgiving leftover casserole. And get this…there are tater tots in it! Your kids will love this hot dish. yeah, I said “hot dish”. Apparently, that is what meals like this are called in Minnesota. I like it 🙂

Anything topped with tots is a winner in my household – I’m just going to put that out there first.

But aside from that, this Colorado Cowboy Casserole is super flavorful and kind of reminds me of something you’d get at a county fair.

I think it’s the potato and cheese combo. It’s highly addictive! I couldn’t stop getting bites long after my two servings I had at dinner. I’d walk by, grab a bite. Covering it up? Grab a bite.

Long after dinner when I was still up and everyone was asleep? I grabbed a few more! That’s just what this dish does to me.

It’s not time-consuming at all to prepare. It’s just a matter of browning beef, combining it all, topping it and throwing it in the oven. There’s just enough extra flavor in this that it’s not like the typical tot casserole. Try it, they will love it!

My Kids Sure Do Love This Casserole And I’ve Got a Feeling Yours Will, Too!

Last week, my husband worked very late and I had mentioned it to my neighbor Anne. I think she felt a bit sorry for me, or just wanted to take advantage to eat food with someone else and she invited me over her house. I was not sure what in the world we were going to do, but I knew it would likely involve food, so I made sure to wear my comfy stretchy pants for such an occasion. Well, when I walked over and entered through her door, I realized how well I had pinned the needle on the head: this was a food party!

Anne had prepared multiple dishes (even different kinds of the same dish, such as mac and cheese!). She laid them all out, chose a movie (a Hallmark movie, of course!) and we sat on the couch and began to pig out. One thing I noticed was that this was all breakfast food.

We were having a breakfast for dinner party which I thought was super cool! The main dish at this little party of ours was a chicken tater tot casserole. My oh my, this was stupendous!

For as long as I can remember, tater tot casserole has sort of been my go-to meal. It doesn’t require much prep, and I always keep the ingredients on hand for a last minute meal idea. Some people enjoy eating this casserole with peas, but my family prefers green beans. What do you think yours will like?

Tater tot casserole is a wonderful fall or winter meal because it’s hot and comforting in the old tummy. However, I’ve made this meal plenty of times during the spring and summer because it’s just so darn easy to make. If you haven’t yet tried tater tot casserole, please consider using my recipe to whip up your very first batch. You won’t regret it!

Well, folks, it’s that time a day again; dinnertime. It’s the point in the day where you realize you haven’t prepped, planned, or prepared anything yet. You don’t have time to toss a roast in the oven or fry up those pork chops you have in the freezer (keyword being “freezer”). What do you do? You make this fantastic casserole.

Tatertot casserole has been a family favorite meal in my household for years. It’s easy to make and very filling. My kids and husband gobble this casserole up like they are death row inmates savoring their last meal. If there are any leftovers, well, let’s just say they taste amazing the next day. All you have to do is brown the burger, toss in the veggies, and mix the soup to get started on this great meal.

Quick Tip: If you don’t wish to use ground beef, swap it out for ground turkey. I actually prefer using ground turkey as it produces less grease during baking.

When most people think of a Spanish casserole, they don’t immediately think tater tots, but I say…why not?

They make for the perfectly crispy, and crunchy crust that just adds to the taco-like feel of the dish.

This delicious cheesy casserole, takes out some of the guilt of making tater-tots your main staple at dinner time.

And trust me…you won’t hear ANY complaints from the kids, on this one.

Once you taste this dish, you’ll be thinking up all sorts of ways to eat those favorite tots.

This recipe is obviously a kid pleaser, and is simple and quick to whip up.

Ready in about 40 minutes, this bubbly and cheesy casserole serves up to 6 people.
