I love budget-friendly dinners! I grew up in a home where I learned to appreciate everything I had. My parents were farmers (we had a very small farm) so from the early years of my life, I learned what it took to provide for a large family. I also learned that a great meal, or a great life in general, is never about how much money you have and how expensive things you can buy. Even when I have some extra savings, I like to purchase inexpensive things and keep the money in my bank account for something special.

That’s why I got so excited when I came across this recipe! It uses the simplest of ingredients that you’ll probably already have at hand, or you can get them for just a few bucks. This casserole is easy to prepare and it’s a hearty meal for your whole family, as the recipe serves 4-6.

When most people think of a Spanish casserole, they don’t immediately think tater tots, but I say…why not?

They make for the perfectly crispy, and crunchy crust that just adds to the taco-like feel of the dish.

This delicious cheesy casserole, takes out some of the guilt of making tater-tots your main staple at dinner time.

And trust me…you won’t hear ANY complaints from the kids, on this one.

Once you taste this dish, you’ll be thinking up all sorts of ways to eat those favorite tots.

This recipe is obviously a kid pleaser, and is simple and quick to whip up.  

Ready in about 40 minutes, this bubbly and cheesy casserole serves up to 6 people.

JUST when you thought the city was safe, here comes the monster of all sandwiches!

I lived in the North End of Boston for years, and boy do they know how to make the best Italian fare!

Sopressata is an Italian dried Salami, but it can be substituted for any type of Salami you have on hand.

You don’t need to be Italian, to experience the sheer joy of the Muffuletta!

This recipe takes about 90 minutes and serves 4-6 people, and as Italians go…these portions are large!

The olive-vegetable spread is key to the flavors of this dish….I wouldn’t recommend just using mayo.

I also added a little lettuce and pickle to my sandwich, as I love an incredible crunch, with ever bite.

It’s not often that you see a pasta salad with spaghetti, but now that I see it I think I should make it more often! This California spaghetti salad is loaded with color, flavor, and texture.

 

Packed with fresh veggies like cherry tomatoes, zucchini, cucumber, and bell pepper, the colors are appealing and the fiber will fill you up. The zesty Italian dressing is the perfect finishing touch to this refreshing side dish or lighter lunch. Bring this to a potluck or any get together as it travels well and everyone will love it when it gets there!

A Super-Tasty Stew With a Curious Name

Ropa Vieja literally means “old clothes” in Spanish, and though, as the name implies, it may not be the most elegant-looking dish in the world, but it has a nice splash of color and is chock full of great, savory Latin American flavor. And this version for the slow cooker makes putting it together super-easy and leaves the meat as tender as ever.

 

Some days, you just want a nice escape.  And though I enjoy my escapists shows and love reading a good book, now and then, eating the right sort of meal can be a nice adventure to another world, too.  I broke out my Crock-Pot yesterday morning to put this Slow Cooker Ropa Vieja together, and by the evening, I was enjoying a delicious stew and imagining myself in some humble but bustling cafe in Puerto Rico.  Latin America does know how to do comfort food.
