Now, here’s a recipe I’ve been wanting to share with you forever! This is one of my favorite meals to cook – because I hardly have to cook at all to get this done! It’s perfect for those midweek days when you have to rush out the door again, before you’ve hardly had a chance to step inside after a hard day’s work.

I love setting my slow cooker in the morning, literally forgetting I even did it, and then coming home to a wonderful surprise when all these beautiful aromas greet me at the door.

Sometimes miracles happen and I have time to make pita bread pockets from scratch – I always make a large batch and freeze as many of them as I can, so that I can whip up this crazy easy meal on a busy day again.

But there’s no need to worry if you’re schedule is too full to even think about making your own pita pockets. This grab-and-go meal tastes just as great even if you’re using store-bought ones.

Here’s a recipe that’ll make you feel like a true cowboy, or cowgirl! Perfect for the chilly, dreary days and guaranteed to keep you warm, no matter what the season. You’ll be surprised to hear that this hearty chili is super lean and great for anyone who likes to watch their figure. Hands Down, The Most Comforting Meal For The Chilly Nights

There’s nothing I enjoy more than a delicious, hearty soup on a cool fall day. I’m a big fan of this season – I like the cooler weather, the crispy air and the golden shade of autumn sunlight. What I don’t like is the fact that it gets cold inside the house, too. Which is where all kinds of soups come in handy. No, you can’t wear them (at least I wouldn’t recommend that), but a steaming hot bowl of soup will fill your belly and make you feel warm again.

My family doesn’t always agree with me, though! You know how it is with teenagers; I guess soup isn’t a very trendy dish these days. They would rather have tacos, burgers or lasagna – or something else I really can’t even pronounce correctly.

I was determined to make soup, anyway, but I wanted to surprise my family by turning it into something they would actually love to eat. Enter, this incredible tortilla soup!

This is such a brilliant idea and I knew immediately my kids would love it. And they did!

Until you’ve tried this, you haven’t really lived.

There are plenty of recipes for all kinds of pasta salads out there but I don’t think I’ve ever come across one as juicy, mouthwatering and scrumptious as this one.

I’ve tried the simple and complex ones, I’ve tried ones with fancy ingredients and ones that are only using a handful of things, that can be found in every single household in this country.

When it comes to the ease of making, I would say this recipe is not the simplest one, but it most definitely isn’t difficult either! The end result is far from those dry and dull ones you can get store-bought.

I loved the fresh peas in this and I gotta tell ya, the vinaigrette is to die for! You shouldn’t limit its use to this salad only! I, for sure, am going to be adding it to pretty much every salad from now on. Trust me, it really is that good.

I fell in love with mangoes a few years ago when my husband and I were visiting family in Hawaii. They had this huge mango tree in the backyard – you can’t even imagine how delicious those mangoes were! We basically had them for breakfast, lunch and dinner.

I was cleaning my attic last weekend when I came across what I used to call “memory book”. It was an old one, maybe about ten-years-old. I love doing crafts like that. Instead of just compiling the photos just like a photo album, I love writing the stories. It’s in the stories where the memories that came with the photos are preserved. I have about a dozen new scrapbooks in my study, all of them containing memories with friends and family. This one though belonged to my old archive, which I stored in the attic to make way for new memories.

 

I came upon one picnic photo that I had with the family years ago. It was a picnic beside a lake near our hometown. It was just us family—my parents, my brother, his wife, my niece, and I. My niece was just about two-years-old. In the photo, my niece’s cheeks were smudged with something gooey and sticky, which I now remembered as cheese. My sister-in-law fed her with a small chunk of Mom’s famous stuffed chicken. She seemed to like it so she snatched the piece and stuffed it in her mouth. Well, I can’t fault her. Mom’s stuffed chicken are the best I’ve ever tasted until now. I remembered that they had to bathe her in the lake just to remove the stickiness all over her, causing my brother to fall head first to the lake. Ah. Good times.

This Tasty Salad Will Easily Feed A Crowd!

Whenever I’m throwing a party I always struggle trying to find a simple, inexpensive dish that will feed a large crowd.

I love all kinds of tiny appetizers, but I’ve noticed the ingredients can be on the expensive side. And quite often they are also pretty time consuming to put together. Lately I’ve started to turn more towards nice, festive salads and they have proven to be a hit every time. So that’s what I had in mind when I started searching for a new recipe for an upcoming get-together.

This Mexican-style pasta salad is a winner! It won’t brake the bank, and the recipe makes 16 servings (which is plenty, even if your guests are going for seconds – which they will…) This salad would also make a great lunch on its own, when served with some fresh baguette and garlic butter. Bring some Mexican flavors to your next party!
