This Dessert Is Like Manna From Heaven, In The Middle Of The Craziest Weekdays

My mother makes a killer rice pudding! It’s something that our whole family keeps talking about, and whenever we gather together everyone is always looking forward to the dessert. One time, I think about ten years ago, my Mom made a huge mistake. Instead of rice pudding she served cake for dessert. The cake was amazing but we were all a little confused…

She did notice people were acting funny so she brought the thing up herself. Finally, one of my cousins built up enough courage to ask her if she had gotten tired of making rice pudding for the family gatherings. My mother started laughing so hard! She had thought we had gotten tired of eating it!

Needless to say, we’ve had the same dessert ever since. Every year she does come up with a special new tweak, though, to see if we like it better than the original. This year she used coconut milk to make the pudding and it was sooo scrumptious!

Remember When Grandma Always Used To Make This? Yummy!

Rice pudding is cooked in a similar fashion as risotto, except it’s sweet versus savory. Using Arborio rice combined with milk and sugar, this pudding is incredibly simple to make while maintaining an impressive appeal.

When I was little, my grandmother used to cook a huge meal for our whole family right before Christmas. It was her way of bringing all of us together at least once a year, despite our busy lives. She always made a huge bowl of rice pudding for dessert, and she hid a single almond in there. Whoever got the almond, got a special Christmas present from her. Ahh, the memories! This recipe brought it all back to me.

With a creamy texture and cinnamon topping, once you take a taste you won’t be able to put your spoon down. This recipe serves 4 and is ready in under an hour. Customize your pudding by adding in dried cranberries, raisins, granola, or coconut for a different flavor.

The Italians are best known for their pasta dishes, but they can make a lovely rice dish or two, as well! This Sweet Potato Risotto is a delicious variant on a classic North Italian home recipe. It is such gourmet flavor in just a few easy steps. People in America may think of risotto as a dish for fine-dining restaurants, but it has its origins in comfort food cooking for the home. A big part of its appeal is that it makes for a highly variable template for most any flavor combination that you want.

Most people also think making risotto is difficult. It certainly isn’t! I used to think so, too, before I finally decided to give it a try. In my opinion, the secret is in the splash of white wine. It brings in such an incredible flavor that people will thing you’ve hired a professional chef to do all the cooking for you!

Quick tip: Make sure you use rice that is especially meant for risotto. Regular rice just won’t be the same.

The Italians know how to cook far more than just beef. There are plenty of good ways that they cook chicken, too. This One-Pan Chicken Risotto is creamy and savory, gives you about all the veggies that you could possibly want in one meal, and can be prepped and cooked in about 45 minutes.

Getting through the middle of the week can be a real challenge, particularly if you have a couple of school-aged mouths to feed and don’t want to scrimp on dinner but don’t have the time (or energy) to be in the kitchen all day, either.  I bring you a one-pot meal chock full of tasty and healthy vegetables that makes about eight servings super-quick, meaning that the usual family of four will have plenty of leftovers (and you will have far less to clean up).
