I Never Thought Adding This One Ingredient Could Make This Salad So Amazing!

 

A good friend of mine thought it was weird that I was going to serve potato salad for Thanksgiving.

 

In her opinion, potato salads were for summer parties and BBQ’s, not for Thanksgiving or Christmas. It’s funny; sometimes we are so used to doing things the way we’ve always done them, that we don’t even think about other options.

 

When I was young, potato salad was definitely a barbecue dish for us, too. But pretty soon after I got married and started a holiday tradition of my own, it became a Thanksgiving and Christmas side dish.

 

I think it goes together perfectly with all the other holiday foods. Besides, everyone seems to love potato salad!

I haven’t always made the same exact recipe, though. But this one, from Melanie Cooks, has quickly become my favorite. There is one special ingredient I had never thought of adding – it made such a big difference!

 

It had never occurred to me to add sweet pickle relish to a potato salad recipe but once I tried it, there’s no going back!

 

Also, for mustard I used Dijon – I think it works perfectly and gives this salad even more flavor.

 

Don’t worry; this is not going to taste mustardy at all. In fact, you could even add a little bit more of it, and it would still turn out awesome. I like to cut the potatoes into smaller pieces but you can leave them in bigger chunks, too, if that’s your cup of tea!

 

Ingredients

8 medium potatoes, peeled and quartered

2 tbsp white vinegar

5 hard-boiled eggs, peeled

2 celery stalks, diced

4 green onion stalks, diced

1½ cup mayo

1 tbsp mustard

2 tbsp sweet pickle relish

1 tsp sweet paprika (optional)

Salt and pepper to taste

 

Instructions:

Bring a pot of salted water to a boil. Add potatoes and cook for 25 minutes. Drain and cool for 15 minutes.

Cut the potatoes into ½ inch pieces.

Put potatoes in a large bowl, drizzle with white vinegar and stir.

Chop the eggs and add to the potatoes.

In another bowl, mix mayo, mustard and sweet pickle relish.

Add the mayo mixture to the potato salad and stir to combine.

Add salt and pepper to taste.

Put the potato salad in a serving bowl and sprinkle with paprika.

The KING Of All Potato Salads!

If there is one that I am certain of it is that I am a potato salad girl! I love me some picnic potato salad!

You can all have your macaroni salad and I’ll just sit in the corner with the bowl of spud salad and a spoon. Sound good? LOL This recipe is for a honey Dijon potato salad that is made with red potatoes and other yummy ingredients. It’s unlike any other tater salad you’ve ever had in your life…and it is awesome! I love the sweet and tangy tastes that are floating around in this yummy side dish and you will, too.

At first, my husband was skeptical of this potato salad but once he tried it he was smitten as a kitten in a laundry basket of warm towels.

My kiddos even liked this recipe and they don’t like anything!

This potato salad is perfect for light summer fare. It goes perfectly with BBQ food such as steak, chicken, and ribs. It’s even great all alone as a snack or for a light luncheon plate.

 

I remember our family BBQs during my childhood summers very fondly. Grandma always made this delicious potato salad that made everyone happy. She would go through a 25 lb. bag of potatoes and we always had leftovers to nosh on the next day. Since becoming an adult with a family, I now make this myself.

Potato Salad Made Easy And Done Just Right

I have more than a few fond memories of eating Mother’s homemade potato salad with a nice plate of barbecued baby back ribs and baked beans.  Though I have come across many varieties of potato salad in my time, yet for that comforting, at-home flavor, I find myself drifting back to the classic Southern version of it that Mother made so well. Though she had to allow for time for the flavors in the salad to settle after making it, I always loved her version far better than the usual store-bought options (which often made use of far too much mustard relative to the other ingredients).

This recipe captures the spirit of what she made from memory so well, I think. This Classic Southern Potato Salad is just the right sort of side for your family barbecue or for a much larger cookout or tailgate.  It has a great flavor and isn’t too difficult to make, either.

Mmm, mmm, mmmmm. That’s the first thing that came to my mind when I found this recipe. It’s usually a sign that tells me something good is about to happen – or something delicious! And I was right.

 

This Loaded Potato Casserole is sure to be a hit at your next pot luck or tailgate. It has all the staples of a loaded baked potato but the easiness of a casserole. I like the fact the recipe has sharp cheddar in it, as I really enjoy having a stronger cheese flavor.

My family like a lot of cheese so I actually used three cups. It was absolutely perfect, but if you’d rather have a little less cheese, this will be just as delicious as a lighter version, too.
