The Only Thing Better Than These Mashed Potatoes Is… 😉

Oh my! I wonder what you thought I was referring to? It might be a good idea to keep it a secret! But whatever you thought it was, these sinfully creamy mashed potatoes are right there, fighting for the 1st place. And I guarantee none of the recipes you’ve tried over the years will come even close to this one. I know – I didn’t believe it either when my friend told me that.

She said this recipe was so delightful that she had ditched the entree and just eaten two massive servings of these taters. I still didn’t believe her, but she wouldn’t give up so I promised her I’d give the recipe a shot.

I almost forgot about the whole thing until Easter, when we had special guests coming over for dinner. I thought, ok – if these mashed potatoes are really as good as my friend said they were, I’m going to try and wow our guests with these.

But I had no idea I would almost knock myself unconscious with this amazing flavor! I swear I was the first one at the table to say “these are AWESOME”, and I didn’t even think how silly that must have sounded coming from the cook herself!

Mashed potatoes are always a welcome addition to my table, and the simple addition of sour cream really knocked my socks off. Delicious!

My kids and husband kept saying that there was something different about these potatoes and I kept them guessing until we were finished eating. I heard many guesses like extra butter, more milk, and even cream cheese. By the way, adding cream cheese to mashed potatoes sounds heavenly and I think I’m going to have to try that next. Have you ever tried it?

When I finally told the fam that I put sour cream in the mashed potatoes they were shocked. My youngest son kept asking why the potatoes tasted so good and not sour. I had to laugh at that. There is just nothing better than bacon, potatoes and cheese… am I right? Ha, well at least that’s how I feel when I’m in the mood for comfort food. And comfort food this is! De-lish.

I think this recipe makes a wonderful side dish for your holiday table as well as a great weeknight meal. You can eat these cheesy, bacon potatoes as an entree because, why not? Whenever I serve the dish as an entree I’ll include steamed veggies and crusty homemade bread.

When it comes to holiday food I like to offer a variety of options. I really do go all out and these cheesy, bacon potatoes are a welcome addition to the table. I mean, really, who doesn’t like cheese and bacon? And if you love cheese and bacon as much as I do then you will really lose your mind when those two items are added to a hot dish of yummy potatoes. Some people may think it’s weird, but whenever I’m making scalloped potatoes, I honestly think it beats whatever entree I’m serving that day. I could enjoy this classic side dish for breakfast, lunch and dinner – and probably a little bit for dessert, too! I’ve also tried turning it into a full meal just by adding some ground beef. It turned out awesome!

Scalloped potatoes make the perfect side dish for your family reunions or any kind of get-togethers. It’s super easy to double, or even triple the ingredients and make these ahead for a large crowd, the night before.

This recipe does not include cheese but my little secret is to add some, every time I make these. It doesn’t even matter what kind of cheese; I always grate whatever scraps I happen to have in the refrigerator. You could also use half milk, half cream if you’d like a creamier dish, but I guarantee this is delicious just using milk, too!

This potato salad is perfect for light summer fare. It goes perfectly with BBQ food such as steak, chicken, and ribs. It’s even great all alone as a snack or for a light luncheon plate.

 

I remember our family BBQs during my childhood summers very fondly. Grandma always made this delicious potato salad that made everyone happy. Do you have a favorite breakfast dish that you always order when you go out for breakfast? Maybe it’s the scrambled eggs with a spicy twist you can get at that place near you. Or simply bacon, when they cook it perfectly? Or perhaps you’re more of a breakfast blueberry muffin type of person?

I literally try the corned beef hash at almost every new breakfast place I go to. My grandfather is the one who started me on it and I have loved it ever since. I particularly like it crispy and this recipe really delivers on the crispiness.

I was also really surprised on how easy it was to prepare I started with some pre-made corned beef, I am sure this would be even better if I made my own but for convenience sake bought some pre-made.
