I Never Thought Adding This One Ingredient Could Make This Salad So Amazing!

A good friend of mine thought it was weird that I was going to serve potato salad for Thanksgiving. In her opinion, potato salads were for summer parties and BBQ’s, not for Thanksgiving or Christmas. It’s funny; sometimes we are so used to doing things the way we’ve always done them, that we don’t even think about other options.

When I was young, potato salad was definitely a barbecue dish for us, too. But pretty soon after I got married and started a holiday tradition of my own, it became a Thanksgiving and Christmas side dish. I think it goes together perfectly with all the other holiday foods. Besides, everyone seems to love potato salad!

I haven’t always made the same exact recipe, though. But this one, from Melanie Cooks, has quickly become my favorite. There is one special ingredient I had never thought of adding – it made such a big difference!

This potato salad is perfect for light summer fare. It goes perfectly with BBQ food such as steak, chicken, and ribs. It’s even great all alone as a snack or for a light luncheon plate.

 

I remember our family BBQs during my childhood summers very fondly. Grandma always made this delicious potato salad that made everyone happy. She would go through a 25 lb. bag of potatoes and we always had leftovers to nosh on the next day. Since becoming an adult with a family, I now make this myself.

Macaroni salad is a staple picnic food that my has at almost every summer gathering. We don’t just make this salad; we craft this salad with a chef-like precision. Ok, so we like to think so, anyway. Haha!

This recipe for mac salad is the bees knees, and you wanna know why? Because there is tuna fish in it. Now, I know what you’re thinking, “not everyone likes tuna!” I totally get that. I, particularly don’t like tuna, but when it’s intermingled in the savory ingredients of this salad, it truly becomes the “chicken of the sea.” Tuna gives this traditional BBQ salad such an awesome kick of flavor and protein.

If you aren’t a tuna fan, I encourage you to at least give this macaroni salad recipe a try. I just might make a believer out of you, yet! I have a house full of picky eaters and they gobbled this up so fast, I knew within minutes I should have made a double batch!
