This potato salad is perfect for light summer fare. It goes perfectly with BBQ food such as steak, chicken, and ribs. It’s even great all alone as a snack or for a light luncheon plate.

 

I remember our family BBQs during my childhood summers very fondly. Grandma always made this delicious potato salad that made everyone happy. She would go through a 25 lb. bag of potatoes and we always had leftovers to nosh on the next day. Since becoming an adult with a family, I now make this myself.

Nothing beats an easy, peasy Crock Pot meal, especially one that tastes great and the whole family enjoys. We’ve made a lot of Sloppy Joe’s in our day, but this recipe takes the burger.

Juicy ground beef smothered in a savory tomato sauce will bring even the pickiest eater to their knees. All you need are 8 simple ingredients plus your slow cooker to pull off this amazing meal. This is one of those lifesaver recipes I turn to, whenever I know the day is going to be super crazy. I set all the ingredients in the morning, go on with the madness (that some call being a mommy), and when dinnertime is among us, I just bring out the crock pot! Thank heavens for slow cookers!

Italian Comfort Food, Indeed–YUM!

This Italian dish may not be as well known in the United States as, say, spaghetti with meat sauce or lasagna, but it is at least as comforting and filling!  It is not your usual lamb- or mutton-based version of such a dish, but the Italian Shepherd’s Pie is still very hearty and incorporates a multitude of savory ingredients into one recipe.

 

I had generally shied away from shepherd’s pie in the past, because most traditional versions of it are made with lamb or mutton, and I inherited a bit of a shyness about trying those meats from both my parents.  When I came across this version, though, I was eager to give it a try.  The combination of ingredients spices up the dish a bit and offers a different choice of meat while still remaining true to the simplicity and comfort-food spirit of the original.
