Kids And Adults Alike Are Going To Beg For Seconds!

You won’t believe what I have gotten myself into now! My sister’s two kids are coming over for the weekend while she and her husband are traveling for work.

These two boys, aged 5 and 6, are the most adorable and lovely kids ever, but they are not exactly very adventurous when it comes to food. My sister has been struggling, trying to find them new foods to eat, since it does seem occasionally that all they like is cheese. Somehow I blurted out; “Twenty bucks says I can make them love fish” – and now she is absolutely certain I will fail…

Maybe I was a little overconfident, but I have a special trick up my sleeve that my sister doesn’t know about. You see, I’ve found the recipe to the tastiest salmon cakes on the planet, and I’m pretty sure the boys are going to fall in love with these, without even realizing what they’re made of!

These are the crunchiest, tastiest fish cakes I’ve ever tried, and I have been making them this way ever since I first tried the recipe. No fancy ingredients needed! You probably have all of these at hand.

Baked in foil, this recipe is one of the easiest out there.  Ready in under an hour, this recipe makes 4, tomato drizzled, fresh fillets.  Serve this with a side of healthy greens, so you can go crazy for dessert.

I love seafood dinners but sometimes it seems hard to find tasty recipes that aren’t too complicated to make on a busy weeknight. This Herbed Baked Salmon is about as fast and simple a seafood main course as you can get. And with fish like this, you want to keep it rather simple… no need to overload something already flavorful on its own.

 

I know that not everyone is keen on the flavor of an oily fish such as salmon, but if you aren’t totally opposed, I really suggest that you give this recipe a try. This is a simple but well balanced set of herbs that, with the zesty acidity of lemon, complement the natural flavor of the fish very well.

I have to admit, my relationship with salmon wasn’t exactly love at first bite; it was more something that I grew to appreciate over time.  Even in the early days, though, well before I enjoyed salmon as much as I do now, I always liked salmon croquettes when Mother made them.  Yes, the salmon taste is still there, but it’s rather subtle; the other ingredients combine to yield a treat that is well balanced and has depth of savory flavor without being too overpowering in any given direction.
