That Fluffy, Creamy Frosting Is Better Than ANY You’ve Ever Tried Before

I didn’t know it was possible to get tired of your favorite cake in the world but, ladies and gentlemen, it happened. I am still in shock and I think I may need therapy. It was a couple of weeks ago when I made the chocolate cake I had LOVED for years, and I thought, “this doesn’t taste as good as it used to”. Seriously, I had over-enjoyed that recipe!

Lucky me, I had already set my eyes on an amazing cake my friend had made for her daughter’s birthday party. It was so delicious, I just had to ask her for the recipe. And since my old favorite didn’t seem delish anymore, I grabbed my apron and got to work last weekend!

Boy, am I glad I did because this turned out amazing! The cake itself is totally scrumptious, but that special frosting will make you slap your knees – or maybe even your momma! Who would have thought a little bit of mint could make such a huge difference?

There are a lot of things in this world and in my life that I could do without, but chocolate isn’t one of them.

Oh my goodness, I am addicted. I love any kind of chocolate; dark, white, milk chocolate, filled chocolate bars, chocolate with chili, puddings – any kind! But if I’m being completely honest with you, there is nothing that makes me happier than a huge slice of chocolate cake! Preferably with chocolate frosting, too! A cup of dark roast coffee is its perfect companion.

It has been a long road to find the world’s greatest chocolate cake recipe, but I think I’ve come really close with this one. I’ve served this at so many parties already, and it has always been a huge success. One time, this literally disappeared in 10 minutes – and I’m not even exaggerating! People came back for a second slice immediately as they had gobbled up the first one.

All this talk about chocolate has made me hungry… I think I’m going to make this cake for dinner! You know; because I can!

I want to think that my best friend and I will survive anything that will test our friendship. After all, we have survived a lot of things in the past which made it stronger. I love it whenever I visit her. We don’t just banter and play with my godson, we always have these serious talks that involve her life as a mom and my life as a career-oriented woman. We both envy and admire each other in a way. She never really wanted to be a mother just yet, but circumstances happened. And now she wouldn’t exchange my god son for anything else. She said she would do it again in a heartbeat if she had to. Still, she missed her life prior to motherhood sometimes.

 

Marriage and motherhood are on my list, of course. As a woman, those are some of my dreams. Except that right now, I still want to do a lot of things and I couldn’t commit to something that I wouldn’t be able to do well just because I wasn’t ready. I envy her in that aspect. Every time I see my godson and her life, I wonder how it would be if it was me. But then again, at the end of the day, we still feel content over what we have. We just sigh and smile at each other over a cup of coffee and her version of this perfect mini tiramisu eclairs recipe.

I had never even heard of the term poke cake until one day that I was just relaxing with a friend of mine on a couch and she told me about the new poke cake she discovered. You see, she is a great baker and loves to try her hand at new recipes that are usually plain and make them a little more exciting. One of her favorite new styles of cakes is poke cakes and I had no idea what they were.

 

I asked her what in the world that was, and with a laugh she explained that it is simply a cake baked in a brownie dish and then poked to infuse with some sort of delicious liquid or frosting. It is almost the same process of making a Tres Leches (a vanilla cake that is poked to infuse cow’s milk, evaporated milk and sweetened condensed milk), but even easier. This specific one she was referring to was chocolate and I was amazed at all the amazing tastes that could come together from one simple poke cake. This was almost like two cakes in one here and I was thrilled to give it a try! I was elated and could not wait to get my hands on that recipe!

Ever since I was a little girl, I have loved Tiramisu. It was strange, because I detested coffee, yet I could “drink” the coffee in this dessert with no problem. It was rich, sweet and airy at the same time. It had the richness of the coffee and raw cocoa powder, the sweetness of the lady finger cookies and it was airy with the sweet cream in the middle. It seemed, to me, like the perfect dessert.

 

Fast forward a few years and I met my husband. Turns out he loves Tiramisu as well. It is a wonder because no one in my family likes it so I could never order it at a restaurant. But now? My husband and I are able to try it at every and any restaurant we visit and we absolutely love doing it! We have tried it in so many different places and have also narrowed down our favorites. So now, we decided we wanted to make it at home whenever we wanted. We have found the perfect recipe for this dessert and we think you are going to love it as well! Give it a try and let us know what you think. It is almost better than a restaurant style Tiramisu!

This is What happens When a Tart and a Brownie Fell in Love!

All jokes aside, you’ll fall in love with this recipe too.  Who doesn’t love brownies?  But throw them into a ooey gooey melty tart, drizzled in chocolate, and your eyes will be bugging out over this one!

This recipe serves 8 people and is ready in about 15 minutes time.  You can serve this with a dollop of vanilla bean ice cream and a topping of fresh whipped cream.
