You Only Need 15 Minutes To Make This!

I used to often order garlic pasta with brown butter at one of my favorite chain restaurants. For a long time, I thought it was the creamiest, most delicious pasta in the world, and I didn’t think it would be possible to find a better recipe (let alone, make it at home!)

However, this creamy avocado pasta recipe proved me wrong! This is much creamier than your typical pasta with brown butter, but I like the difference.

If you want to add a protein to this dish it is nothing to throw a breaded chicken cutlet on top of it, or full a healthier approach a skinless chicken breast, or some steamed clams.

This is a really versatile and tasty dish. The recipe has a prep time of only 15 minutes and it makes three servings.

What? No Beans??

Are you a chili fan? I know that my family and I certainly are. We can eat chili any time of the year and by that, I mean during the Dog Days of summer. Chili is just one of those go-to foods that you make when you don’t know what else to make. I typically have all of the ingredients for chili in my freezer and pantry, at all times. I love making meals that do not require me to go to the grocery store. This chili is a different kind of chili in that it is Texas-themed.

For those of you who do not quite understand what a Texas bowl of chili looks like well, it does not contain any beans. I know, I know, I was shocked and amazed myself. I thought, “Now, how on earth can a beanless chili taste good?!”

Well, folks, it does taste good. With all of the other yummy ingredients mixed into this chili, you don’t even notice the absence of the beans. So, make this chili and enjoy!

Quick Tip: If you find that you made the chili a tad too spicy simply add a few tablespoons of honey to the mix to balance the bite a bit.

This Tasty Salad Will Easily Feed A Crowd!

Whenever I’m throwing a party I always struggle trying to find a simple, inexpensive dish that will feed a large crowd.

I love all kinds of tiny appetizers, but I’ve noticed the ingredients can be on the expensive side. And quite often they are also pretty time consuming to put together. Lately I’ve started to turn more towards nice, festive salads and they have proven to be a hit every time. So that’s what I had in mind when I started searching for a new recipe for an upcoming get-together.

This Mexican-style pasta salad is a winner! It won’t brake the bank, and the recipe makes 16 servings (which is plenty, even if your guests are going for seconds – which they will…) This salad would also make a great lunch on its own, when served with some fresh baguette and garlic butter. Chicken fajitas. The best thing you could possibly order at a Mexican restaurant. They come sizzling hot, letting off smoke that just stinks up your hair. But it is absolutely and totally worth it because it is just that good! The flavor of that chicken is deep, with a little kick of spice. They are delicious, and totally amazing. With every bite of amazing flavor, I am reminded that I should learn to make this at home. So I finally did.

 

My one beef about ordering fajitas is that they usually do not add enough meat to fill the tortillas. They kind of go cheap on me and I hate that! So I decided that if I made my chicken fajitas at home, I would make more than enough chicken, so no one would feel like they were being gipped. And that is what I did. These chicken fajitas in a crock pot can feed a crowd. It is awesome to make it in the crock pot because you can make enough for everyone without having to fry the chicken little bits at a time. This is the perfect meal to take to a potluck as you will have loads of chicken to serve with this recipe.

I love this Blueberry Glaze Olive Oil Cake! It’s not like any other cake I’ve made before. That blueberry glaze topping just looks so incredibly beautiful that you almost don’t want to ruin it by cutting yourself a slice… I love any kind of cheese but this cake is paired with ricotta, which makes it so creamy and tasty. The dark chocolate evens out the taste and the avocado makes the color so amazing!

 

This recipe just makes the world seem so perfect. Now, I don’t want to ruin the beautiful image but the cake was gone in a matter of minutes! I served it at a family gathering and it sure didn’t last long. I was planning on taking the leftovers with me but, there were none! One of my family members did manage to grab a slice to take home – I wish I had been as clever!

Jazz up a side of corn for your next dinner by turning it into a savory salad, with a Mexican flare.  Eat it on the side or tuck it into tacos, it’s delicious all around.

This recipe serves about 6 people and only takes minutes to make.  If you let it sit in the fridge, the flavors become even more prominent.  Throw in some chopped jalapenos for a little extra kick!
