What? No Beans??

Are you a chili fan? I know that my family and I certainly are. We can eat chili any time of the year and by that, I mean during the Dog Days of summer. Chili is just one of those go-to foods that you make when you don’t know what else to make. I typically have all of the ingredients for chili in my freezer and pantry, at all times. I love making meals that do not require me to go to the grocery store. This chili is a different kind of chili in that it is Texas-themed.

For those of you who do not quite understand what a Texas bowl of chili looks like well, it does not contain any beans. I know, I know, I was shocked and amazed myself. I thought, “Now, how on earth can a beanless chili taste good?!”

Well, folks, it does taste good. With all of the other yummy ingredients mixed into this chili, you don’t even notice the absence of the beans. So, make this chili and enjoy!

Quick Tip: If you find that you made the chili a tad too spicy simply add a few tablespoons of honey to the mix to balance the bite a bit.

Festive Flavors And Lean Ingredients Make This A Superb Dinner!

I have to be completely honest with you. I really love meat; whether it’s pork, beef or chicken, if it’s cooked to perfection it is something that makes my mouth water.

I do enjoy vegetables as well, and I always try to include them on every meal. This dish combines both and that’s why it is one of my favorite meals ever! The ingredients are rather simple and very lean, so you can enjoy your dinner without having to worry about your calorie intake!

I have a tip for all of you who like to keep an eye on how much you spend on food. These days when a bag of groceries seems to get more and more expensive all the time, it’s good to pay attention to when and what you’re buying. The root vegetables in this dish are great for the winter season; that’s when they are most inexpensive and they stay fresh for a long time. I also like to buy a large batch of meat whenever it’s on sale, then I divide and freeze it for later use.

“It’s difficult to cook beef,” that’s what I always heard from my Mom whenever we requested for something beefy other than spaghetti and meatballs. She always said it took hours to make the beef tender enough to taste good in recipes. She never liked cooking with hard meat; she always said they spoil the dish. Beef dishes also required a more focused cooking. One wrong ingredient or one additional minute in the stove, and the meat wouldn’t taste as good. I remember Dad saying that pig could be roasted whole over direct fire, but beef couldn’t. Still, it’s a household favorite. Because when beef is done perfectly, it makes the most delicious dishes since it has the best flavor among all meats.

 

Whenever we had beef on the table, I was always happy. I would always take advantage of the meal and come back for a second or a third serving because I knew it would be a month or two before I got to taste beef again. I love it especially when we have beef brisket. Mom’s beef brisket tasted sweet and salty. It’s also very moist and very tender. Most of the time, I didn’t even need side dish or dessert to make me feel content over a meal. Beef has me at the palm of its hand most of the time.

Our friends in France deserve a round of applause for their creation of the French dip sandwich. I mean, seriously, this recipe is dripping (literally!) with flavor. I’ve loved French dip sandwiches for as long as I can remember. My mom used to make them all the time for our family as I was growing up.

 

As an adult, I carried on the tradition of making French dip sandwiches for my family. I love these sandwiches but making them is a bit laborious time consuming…until I found this recipe. Instead of standing over a pot, you get to toss all of your ingredients into the slow cooker and walk away. Read a book, go shopping, clean your house; it doesn’t matter because you have dinner simmering in the Crock. Nice, eh?
