You Only Need 15 Minutes To Make This!

I used to often order garlic pasta with brown butter at one of my favorite chain restaurants. For a long time, I thought it was the creamiest, most delicious pasta in the world, and I didn’t think it would be possible to find a better recipe (let alone, make it at home!)

However, this creamy avocado pasta recipe proved me wrong! This is much creamier than your typical pasta with brown butter, but I like the difference.

If you want to add a protein to this dish it is nothing to throw a breaded chicken cutlet on top of it, or full a healthier approach a skinless chicken breast, or some steamed clams.

This is a really versatile and tasty dish. The recipe has a prep time of only 15 minutes and it makes three servings.

The Godfather Himself Would Approve!

Om nom nom! There’s something about Italian pasta dishes that make my mouth water, just talking about them. Maybe it’s the flavorful tomato sauce, or all that cheese these dishes usually include. Whatever the case, they are always delicious and over the years I’ve tried so many recipes, I’ve lost count! This recipe, however, is one that I never intend to lose. It’s my family’s favorite and we make it at least every other week.

What I love about this baked meatball ziti (besides the mind-blowing flavor, of course) is that it is rather simple to make. The recipe includes directions to make the meatballs from scratch, but if you’re in a hurry you can definitely use store-bought meatballs.

What I usually do is whenever I make meatballs for dinner, I make a double or even a triple batch, and freeze some for later. That way I always have homemade meatballs for this baked ziti – like I said; we make this very often! If you want to amp up the flavor even more, you could make your own marinara sauce.

STOP With The Post-Dinner Cleanup Craziness!

Before we get started with the recipe, I have a confession to make. I’m the laziest person on the planet, when it comes to cleaning up after dinner. There, I said it! I feel a little guilty because my husband often steps in to do the cleanup. I guess I shouldn’t feel that way – after all, I made the dinner so it’s very nice of him to offer a helping hand.

The problem is, whenever he makes dinner, he always washes all the pots and pans and cleans up the kitchen before we even start eating. And that, my dear readers, is why I feel guilty.

I don’t know how he manages to do all that; it’s almost as if he had an extra pair of hands! But lately I’ve been trying to find ways to improve my kitchen skills. And recipes like this one have turned out such lifesavers! There really isn’t a cleanup at all, if you can make your whole meal in one pot. But I didn’t think a pasta dish would turn out this good, until I gave it a try!

Oh, my, gosh. This stuff is amazing!!

The other day I was having a conversation with my friend about food. We discussed the difference between “kids’ food” and “adults’ food”.

Now, you may say that food is food, no matter what your age, but there are certain meals that kids in general don’t like. For example, my kids don’t like anything too hot and spicy, or a medium-rare steak. But then my friend suggested that there are meals that are meant for kids alone, and they are not “a real dinner” you can serve to adults.

I gave her a weird look and asked her to give me an example. You know what she said? Mac and cheese! I was so surprised that I didn’t know what to say for a moment! Mac and cheese is one of my favorites and I certainly make it for dinner all the time. But she seemed to think the dish is a bit childish – which made me want to prove her wrong.

Right then and there I started making this incredibly yummy mac and cheese that is not at all like the box stuff you get from the store.

I would love to travel to Italy! I’ve been dreaming about it for years, and I’ve read every single book about Italian cuisine and wine I’ve been able to get my hands on.

But even more than the food, I would love to experience the beauty of the Italian countryside. If someone asked me to move there right now, I would probably say yes without even thinking about it.

This Recipe Will Take You Back To Mama’s House

You know what always reminds me of home the most? Meatballs. No matter how far from home I happen to be, I can always get these familiar ingredients and feel like I’m back at my Mom and Dad’s house.

I swear, sometimes making these meatballs makes me feel younger, too! I have so many fun memories from my childhood and this was a meal we always very much looked forward to, my siblings and I. Over the years I have tweaked the recipe just a tiny bit, and my kids love these as much as I always have!

I like to pair these with garlic mashed potatoes and gravy, but these will go together with pretty much anything. Spaghetti? Yum. Dinner rolls? Mmmmm! Potato wedges? Yes, please!

If it was up to my kids and my husband, we would be having these meatballs every week! I always bring the kids along when making these – they love to help me out in the kitchen, and they especially enjoy making meatballs. Which is perfect for me, since they really are a big help!

This square pie begs for a try… or two or three.  Easy to share, the recipe feeds as many hungry mouths as you slice it. But watch out for those pesky pizza thieves! Seriously, folks, this pie is the pie in the sky, the Big Kahuna, the cat’s meow. I love it – well, duh! I’ve made it three times already, since I found this about a month ago! The second time was for a family gathering, and people were practically fighting over the last piece!

 

Pizza, pizza, pizza – America loves its Italian pies of perfection! But rather than using shredded cheese, which is rather popular, this dish takes advantage of fresh balls of mozzarella, and shreds of juicy basil. I get that this is an Italian delight, but I’m pretty sure that Jimmy Buffet is noshing on this delicious dish down in Margaritaville.
