I love meatloaf – I mean, who doesn’t?

It is so simple to put together, and even the pickiest of eaters usually like it and go for seconds. I’ve had a favorite meatloaf recipe for years. I can’t even remember where I got it from, but it has been such a hit that I haven’t bothered searching for a new one until just recently. A friend of mine wanted to find a healthier option for this traditional dish, and she had found a new, tasty recipe she wanted me to try as well.

I am so glad I decided to give this turkey meatloaf a try! It turned out so full of flavor that I doubt I’m going to use my old recipe for a while. With added greens and different seasonings, this immediately became a favorite in our house.

The seasonings used in this recipe are salt-free, which makes this even healthier and suitable for people with dietary restrictions.

Bacon Makes Good Things Even Better

I know I said Tailgate Touchdown in the headline but I might as well have said Morning Routine Touchdown! These egg and bacon muffins have saved my life on so many occasions, I’ve lost count. We all know what it’s like now that the kids are back to school and you’re trying to get them out of bed, comb their hair (or at least brush their teeth) and eat a little something before you rush them out the door. It’s not always easy, or fun, but these guys are here to help you!

These muffins are so easy to make ahead for those crazy times, and even if you’re not making them ahead, they’ll be ready in 30 minutes. Now, that’s what I call fast food! These are not only great for breakfast, but also awesome for anyone who needs to quickly grab a snack or lunch for work.

You can hide all kinds of yummy things inside these muffins! Little bits of cheese, broccoli, grated carrots, you name it! I usually just add mushrooms but the kids love these with spinach.

I love a good spinach and artichoke dip. It is full of delicious creamy and cheesy spinach and the artichoke gives it the perfect crunch. The best place to get it, in my opinion is Chili’s. It is so delicious and the veggie tortilla chips they serve with it go perfectly when eaten together. I cracked up so hard the other day when I went to Chili’s with my sister. She’s 12 and beginning to get into the stage where she wants to eat healthy. So when we ordered an appetizer, she ordered the spinach and artichoke dip.

 

After the waiter left, I asked if she was not eating healthy anymore and she said yeah. I asked why she ordered that and she said because it is green healthy stuff. I had to laugh. This creamy cheesy appetizer was definitely anything but healthy, but it was certainly delicious. Well, we enjoyed it and even lathered on the chicken we ordered later. That is when I came up with the idea of making a spinach and artichoke stuffed chicken breast. It seemed like a perfect idea and after putting it together at home, I absolutely loved it.

When fall turns to winter, it always kind of scares me a little. The weather can get pretty cold where I live, and I’m more of a fan of summer heatwaves. But I have to admit there is at least one thing I really enjoy about the coldness, and winter in general. What is chicken cauliflower casserole? An invention of a meal by my husband. We were playing that usual game of ours where he takes out a bunch of ingredients and I make a dish with whatever he chose. Spices are fair game and so are small things to season the food, but the majority of the dish needs to be made with whatever he pulls out of the fridge. Now, sometimes this can get kind of crazy and we make a dish that is out of this world. Other times it’s a fail, but one thing is for sure: every single time we play this game we have a blast.

 

The most recently event in this game involved chicken and cauliflower. But I did not just want to bake or grill my chicken breast and then steam the cauliflower and be done. I wanted to do a little more, make it a little bit more exciting… so I did. I seasoned it all in one bowl, added a bit of milk and some cheese and put it all in a casserole dish. From there, I let it marinade in that little mixture. Then, I popped it in the oven and next thing you know, we had a really cool new dish!

With two working parents and three kids to get out the door, I feel pretty good on mornings that I remember to slice some banana into my daughter’s cereal.  The boys prefer their waffles wrapped in a paper towel and on the way out the door.

I miss the breakfasts of my childhood, with homemade pancakes and crispy bacon and orange juice that my mom squeezed fresh every morning. I strive to make our weekend breakfasts special and this casserole is everyone’s favorite.
