This Flavorful Meatloaf Recipe Is As Easy As It Gets

Want to hear something funny? Before we had kids, my husband was a picky eater. Well, he didn’t cringe or complain about anything I cooked, but since he can’t even tell a tiny white lie with a straight face, I always knew when he wasn’t particularly fond of the food I was serving. He especially didn’t like meatloaf, but it took me a long time to figure out that was probably my fault.

You see, as a young wife I did not have that much experience in cooking, and I was using the first recipe I happened to get my hands on. I didn’t think it was out of this world, either, but I had no idea how to make it better. Still, I wanted to serve delicious home cooked meals so I started collecting different kinds of recipes and trying them out, one by one, until I hit the jackpot.

I still haven’t found the perfect recipe for some dishes, but I certainly have found one for meatloaf! This super scrumptious one, from Lynn’s Recipes is what we call Daddy’s Favorite these days – my husband and kids are crazy about it! I’m so happy Lynn shared it in her awesome vlog.

You Cannot Lose With This Fantastic Recipe

I am looking forward to getting back to the usual, everyday dinner rotation after all these festive holiday meals! Don’t get me wrong; we all love a delicious, special dinner for Thanksgiving or Christmas, but after eating ham, smoked salmon, roast, red wine gravy and a gazillion different kinds of creamy salads for a few days in a row, you start missing the regular weeknight meals. Or at least that’s what’s happening to me.

I still have the New Year’s feast to deal with but I’m already planning for my first full week of soups, salads and casseroles. “Nothing special” sounds really special to me, at this point!

I asked my family what they would like for their first non-holiday meal and two out of three said meatloaf, so that’s what it’s going to be then! I have a really good recipe I’ve trusted for years – it’s from canarybird01 over at GardenWeb. My family is crazy about this recipe and I’ve shared it with so many people – now I wanted to share it with you, too!

Growing in the country, meatloaf was always a staple meal at my mother’s table. We were a meat and potatoes kind of family. Her recipe was so succulent, so juicy, and so savory that it made your hair stand on end just to get a whiff of the magnificent loaf of meat cooking.

Year after year, I’ve been making and serving my mother’s meatloaf to my own family. However, I felt like I wanted to add an interesting twist to the recipe and I experimented with adding in parmesan cheese. The parm combined with the tomato paste and flat leaf parsley gave the meatloaf a rustic Italian taste. We all loved it, and I anticipate that you will too.

Quick Tip: If you don’t have any tomato paste, tomato sauce will serve as a fine substitute.

Meatloaf so good you might just lose your mind while eating it. Don’t worry, we mean that in a good way 🙂

Stop what you’re doing right now, grab a pound of ground round, and get to crackin’ on this magnificent meatloaf recipe. Seriously, folks, this meatloaf is to die for. One bit, and you’ll be sold for life. The real fun begins when you catch a whiff of this savory meat concoction wafting through the halls of your home while it cooks. Mmmm! We can taste it now! I know that when I was a kid my mother would often make this same meatloaf and my sisters and I could literally smell it from outside when we got off the school bus. It was a heavenly aroma!

Covered in a zesty sauce, the inside of this loaf is moist and meaty, perfect for any family dinner night. Make it a truly hearty meal when paired with golden mashed potatoes, mushroom gravy, and hot Pillsbury crescent rolls. You can always add dessert but you probably won’t have room because you’ll be stuffed full of meatloaf.

Yes, you will have seconds. Shoot, you might even have thirds if your family members haven’t gobbled this meaty goodness all up beforehand. This meatloaf recipe is nothing less than impressive and I’m sure you’ll be making it for years to come. Enjoy!

Two Types Of Meat Really Boost The Flavor!

We all can remember the good, the bad, and the ugly meatloaves in our life. This one you won’t forget, but in a good way! I bet you’ve never had one like this Italian meatloaf, but once you try it you’ll never make it any other way. This recipe doesn’t use just your regular ol’ ground beef, you’ll add in some ground mild Italian sausage too, because why not?! You might normally use plain jane ketchup on top of your loaf – and that’s okay, but this recipe is Italian style, remember?

So you’ll top it all off with Kraft shredded mozzarella, parmesan cheese, and Ragu marinara. Are you drooling yet? I think I need a napkin because my mouth is watering!

Your family will be forever grateful to you for making this awesome meatloaf. I know that my husband and kids gobbled their servings up like nobody’s business!
