This Flavorful Meatloaf Recipe Is As Easy As It Gets

Want to hear something funny? Before we had kids, my husband was a picky eater. Well, he didn’t cringe or complain about anything I cooked, but since he can’t even tell a tiny white lie with a straight face, I always knew when he wasn’t particularly fond of the food I was serving. He especially didn’t like meatloaf, but it took me a long time to figure out that was probably my fault.

You see, as a young wife I did not have that much experience in cooking, and I was using the first recipe I happened to get my hands on. I didn’t think it was out of this world, either, but I had no idea how to make it better. Still, I wanted to serve delicious home cooked meals so I started collecting different kinds of recipes and trying them out, one by one, until I hit the jackpot.

I still haven’t found the perfect recipe for some dishes, but I certainly have found one for meatloaf! This super scrumptious one, from Lynn’s Recipes is what we call Daddy’s Favorite these days – my husband and kids are crazy about it! I’m so happy Lynn shared it in her awesome vlog.

Cheesy Shrimp and Grits are a true southern meal. I remember eating them at Sunday brunches after church. There are many variations of this delightful dish but this is one of my favorites.

Rich creamy grits and spicy shrimp make a very flavorful combination. Mix in some cheese and top it off with salty crisp bacon and you’re sure to impress your guests.

Bob's Red Mill, chicken, chives, garlic, ground pepper, Hood, Hood Milk, lemon, lemon chicken soup, McCormack, milk, olive oil, Perdue Farms, quinoa, Swanson

Imagine a dish so quick and so easy, but whisks you away to the Greek Isles, in flavor?

Not only is it savory and tangy, it’s also incredibly light!

So you don’t have to worry about cheating on that New Year’s diet!

Although this soup is robust with ingredients, every single last one seems to dance like magic on your tongue.

I personally love making this soup at home, when the kids come to visit.

Everyone sits around the table, speaking in silly Greek accents, and it reminds me of home!

This recipe takes about 45 minutes to make and serves up to 8 people, so there is absolutely plenty to go around!

I always serve it with a side of fresh crusty bread, but it truly is a meal all in itself.  It also keeps really well, so why not double down on the recipe?

And have no fear about cooking Quinoa!

If you aren’t familair with Quinoa, the folks over at 12Tomatoes will tell you:

“If you haven’t tried quinoa before, think of it as rice’s healthier, more mature cousin – it’s packed with protein and fiber, and has a slightly nutty flavor, making it one of our all-time favorite health foods. Quinoa also cooks up quicker than rice, making this soup a perfect weeknight dinner option.”

This is real comfort food! Many people are intimidated on trying to cook homemade soups. This is a great recipe for beginners and Tastee enough for the old pro’s as well. This is a one pot recipe. The soup itself with the smokiness of the bacon and the earthiness of the cheese and broccoli is amazing…

but once you throw it into a tastee bread bowl it will blow your mind! Please let us know what you think and share this recipe with all your friends.
