The Quickest And Easiest Meal Ever!

Every parent knows the struggle of figuring out all kinds of tasty lunch box fillers that wouldn’t be totally unhealthy or difficult to make. If you happen to have a picky eater or two then you know the task gets even more daunting. Peanut butter and jelly sandwiches did the trick for a while, but these days I get “the look” if I try to suggest those again…

You know “the look”, don’t you? It’s the one that is sort of a mixture of cringing, disappointment, horror and “whatever you say, Mommy”. It makes me feel awful and I really don’t want to do that to my kids anymore, even though I do think we should be grateful for the things we have – including all kinds of food.

Heck, I couldn’t eat peanut butter and jelly sandwiches five days in a row, so I can’t expect them to do so! That’s why I tried a different kind of sandwich and it turned out a huge success!

Because No-One Likes To Clean Up After Dinner

I’m having a super tight schedule today! I won’t bore you with the details but let’s just say I got up at 5am and I probably won’t be going to bed until midnight, so yeah, busy is the word. Somewhere in between all the craziness I’m supposed to cook dinner for my family – I could just go for takeout but it always makes me feel so guilty!

Instead, I’m going to make one of my favorite, super quick, one pan meals. What I dislike even more than really complicated and time consuming recipes, is the massive clean-up after dinner. So I’ve collected quite an impressive amount of simple recipes that don’t make a mess.

This roasted chicken and vegetables recipe is also a pretty inexpensive one! I often buy a huge batch of chicken thighs when they’re on sale, and then freeze them for later. Then just thaw them in the refrigerator overnight and they are ready to be cooked for dinner the next day.

You Cannot Lose With This Fantastic Recipe

I am looking forward to getting back to the usual, everyday dinner rotation after all these festive holiday meals! Don’t get me wrong; we all love a delicious, special dinner for Thanksgiving or Christmas, but after eating ham, smoked salmon, roast, red wine gravy and a gazillion different kinds of creamy salads for a few days in a row, you start missing the regular weeknight meals. Or at least that’s what’s happening to me.

I still have the New Year’s feast to deal with but I’m already planning for my first full week of soups, salads and casseroles. “Nothing special” sounds really special to me, at this point!

I asked my family what they would like for their first non-holiday meal and two out of three said meatloaf, so that’s what it’s going to be then! I have a really good recipe I’ve trusted for years – it’s from canarybird01 over at GardenWeb.
