It doesn’t get any easier than this! You only need 6 ingredients for this salsa, plus a pinch of salt, and the prep work won’t take you longer than a few minutes. I fell in love with mangoes a few years ago when my husband and I were visiting family in Hawaii. They had this huge mango tree in the backyard – you can’t even imagine how delicious those mangoes were! We basically had them for breakfast, lunch and dinner.

Since then I’ve been trying to find new recipes using this beautiful fruit, and this mango salsa has quickly become my favorite. So easy to make, and the flavors work really well together. Make sure you choose nice and ripe mangoes for this – they bring it just the right amount of sweetness.

A few months ago, I shared with you all a recipe for Mexican Shredded Chicken that you all loved! It was apparently a hit, even though I was not sure how many would actually like a recipe on Mexican food. My family in particular is not a fan of Mexican food, but since I wanted to share what I love as well, I gave it a try and you all loved it. That is awesome! Today I want to share with you another awesome recipe for your tacos: Mexican Shredded Beef. It is just as tasty as the chicken and I think it is even best when combined with the other recipe.

 

It really is so much fun to eat both meats in one taco! This recipe is another easy one with little prep and most all of the work is done in your Crock Pot. It is perfect to come home to after a long day at work or school activities. The meat will be perfectly tender and all you have to do is pull on it gently with two forks and it will come apart in strips, perfect for tacos. This recipe cannot get any simpler or more delicious!

Making a snack that everyone will love can sometimes be a chore. These pork nachos are unbelievably good and super easy to make. I served them at my husband’s Superbowl party last year, and I don’t know what got more cheers, the nachos or the game!

 

The guys loved the nachos, us ladies loved the nachos, and even the kids loved the nachos! One of the best things about preparing this snack food is how simple and easy it is. For the most part, everything gets laid out on a cookie sheet or baking dish and goes into the oven. It’s a quick and effective way to feed hungry bellies. I’ve also made these pork nachos for dinner before and served them up with Spanish rice and refried beans.

The famous Jeff Mauro from The Food Network brings us this awesome take on a classic grilled cheese.  Why separate all your beloved fattening foods, when you can combine them all in one?  Come on….don’t resist this dish!

Ready in about a half an hour, this recipe serves 4 people, but you can double it and cut into smaller slices for a petite appetizer to serve at a cocktail hour.  Otherwise, this is total game day food!

Two of these could about make a full meal by themselves, and one makes for a very good side.  These Twice-Baked Jalapeño Sweet Potatoes are loaded with flavor and healthy goodness. And don’t worry – the spiciness is not overwhelming and easily adjustable.

 

I have read plenty about how good sweet potatoes are for you:  good fiber and complex carbs, much lower glycemic index than “regular” potatoes, antioxidants, Vitamin A, etc. And I have come to love their flavor, though I must admit that I was a bit slow to warm up to them as a kid.  Part of the problem is, I think, that there just aren’t enough good and creative recipes out there for sweet potatoes or at least not enough well-known ones. Well, you’ll want to save this one.
