Sweet Potatoes are a MUST have on our Holiday Menu and anytime throughout the year!

We Love them Especially my son!! I asked him what kind of sweet potatoes for Thanksgiving this year, and he said “All of them!” haha. Well, It was unanimous that the family wanted this recipe and mashed sweet potato casserole. I made this one tonight. My husband loves sweet potatoes, too. Every time we go to the steakhouse he orders a sweet spud instead of a regular baked white tater.

It is an easy recipe with a nice creamy texture and a hint of sweetness. Add the fresh ginger and they’ll be begging for more! A Great Dish to add to any Holiday meal!

This dish can be prepared the night before & baked prior to serving. I love making this dish the night before because it saves me so much time when the big day comes rolling around. Plus, it also saves space in the oven. Yes!

So, yesterday I was thumbing through one of my old cookbooks and came across a recipe called twice baked mashed potatoes. After reading the ingredients list and method, I was sold!

 

I found another recipe online at Foodie Tale that incorporated garlic (one of my stinky lovers) and I knew I had to bake up this to-good-to-be-true casserole. My family absolutely loved this mashed potato bake and gobbled it down like a pack of hungry wolves. Speaking of which, my dog kept sniffing around the table hoping and “pawing” that’d we’d give him a taste. He’s such a sweet dog and definitely knows good food when he smells it.

Potato lovers rejoice! No longer is a loaded baked potato shunned to a side dish, this twice-baked potato casserole moved up to the main meal and will fill your family’s bellies with hearty goodness. With a combined prep and bake time of 35 minutes, this dish is perfect for a weeknight meal! I love it whenever I find a recipe that doesn’t make me slave away in the kitchen for hours.

 

Going back for seconds is a must with the delicious flavors of crispy bacon, gooey cheeses, sour cream, and green onions to top it off. Make this for a pot-luck, or a family gathering as it comfortably serves 6-8. Of course, you could double the ingredients to make sure you’ll have tasty leftovers for lunch the next day. Sure, mash potatoes are a staple for almost any dinner, but why not try something new, while still sticking to that beloved potato dish on the table? This recipe takes everything we love about a creamy and crispy twice baked potato, and puts it in a casserole, for everyone to share!

This recipe calls for a lot of dairy, so be careful if you have any lactose intolerant guests. You can also add to the recipe, by sprinkling the top of the casserole with some of the left over bacon bits, some parsley, and chives. This dish calls for a lot of potatoes. It’s a large casserole, and serves up to 16 people, generously. That shouldn’t be a problem, though, even if you’re not trying to feed a large crowd. It is so delicious you’re going to want to have plenty of leftovers!

Light this is not, but this Cheesy Twice-Baked Potato Casserole is delicious! If you are a cheese lover, this recipe has a good sampling of all of the favorites. There’s nothing fancy about this recipe. In fact, it’s rather simple to put together, even if you do (of course) have to allow time for the potatoes to bake. It’s loaded with good flavor, and it has ‘comfort food’ written all over it.

 

This casserole is loaded with cream and three types of delicious cheese, with just the right amounts of rosemary, oregano, and nutmeg to draw out all of the sweet and savory flavors. I think that this is a great choice of side dish if you want something rich and hearty to complement a main dish on the leaner or lighter side – though you could serve it with any main course that you’d otherwise serve with basic mashed potatoes. I had mine with some yummy meatloaf.

Two of these could about make a full meal by themselves, and one makes for a very good side.  These Twice-Baked Jalapeño Sweet Potatoes are loaded with flavor and healthy goodness. And don’t worry – the spiciness is not overwhelming and easily adjustable.

 

I have read plenty about how good sweet potatoes are for you:  good fiber and complex carbs, much lower glycemic index than “regular” potatoes, antioxidants, Vitamin A, etc. And I have come to love their flavor, though I must admit that I was a bit slow to warm up to them as a kid.  Part of the problem is, I think, that there just aren’t enough good and creative recipes out there for sweet potatoes or at least not enough well-known ones. Well, you’ll want to save this one.
