Oh Em Gee, These Are Incredible!

I’m so excited about today’s recipe that I almost can’t sit still! I’m crazy about potatoes, any way you make’m, so I have collected a vast amount of potato recipes over the years. I didn’t think it was possible to top them – you see, I figured I had already found and perfected the best of the best recipes out there. It turns out I was wrong, and I’m actually really happy about that!

I came across this caramelized roasted potatoes recipe on Vegan Food Lover’s channel, and it is TO DIE FOR. Honestly, I could eat these potatoes seven days a week and twice on Sunday! Vegan Food Lover really has found a heavenly combination of ingredients for that marinade – and I didn’t even realize you could marinate potatoes!

I highly recommend checking out all of his recipes; that’s what I’ve been doing for the past couple of days, and I’ve found quite a few favorites already. Let’s just say I’m going to pamper my family with these incredible dishes for the next couple of weeks, and you all should do the same!

Because No-One Likes To Clean Up After Dinner

I’m having a super tight schedule today! I won’t bore you with the details but let’s just say I got up at 5am and I probably won’t be going to bed until midnight, so yeah, busy is the word. Somewhere in between all the craziness I’m supposed to cook dinner for my family – I could just go for takeout but it always makes me feel so guilty!

Instead, I’m going to make one of my favorite, super quick, one pan meals. What I dislike even more than really complicated and time consuming recipes, is the massive clean-up after dinner. So I’ve collected quite an impressive amount of simple recipes that don’t make a mess.

This roasted chicken and vegetables recipe is also a pretty inexpensive one! I often buy a huge batch of chicken thighs when they’re on sale, and then freeze them for later. Then just thaw them in the refrigerator overnight and they are ready to be cooked for dinner the next day.

Sorry, Grandma – This Is My New Favorite Now

When it comes to summer picnic salads I would have to say that potato is my favorite. Now, my husband, on the other hand, is quite smitten by macaroni salad. When we host a picnic I try to make both. Typically, my potato salad is made using a traditional or classic recipe. You know the one! It usually contains hard-boiled eggs, celery, mustard, and mayo. Am I forgetting something? Oh, yes! And potatoes! LOL Anyway, this recipe is for Creole potato salad and it sure is good!

If you take a look at the ingredient list, there really aren’t too many differences between this potato salad recipe and a classic recipe. However, the flavor is completely different and so much better than any I’ve ever tried! This is a salad that is not just good for picnics – I intend to serve this for Thanksgiving and pretty much any family gathering we end up going to.

If you like your tater salad with a bit of a kick then consider making this recipe. You can also use your favorite, regular mustard for this, and then just add some Creole seasoning (instead of using Creole mustard). Enjoy!

You’ll Laugh Your Way Through Making This

Raise your hand if you’ve gotten takeout more than once this week! I’m kind of embarrassed to say I’ve reached for the takeout menu often lately. I know it’s not the best choice, whether it’s money you’re thinking about or the health aspect. But sometimes (a lot of times, actually) I’m so short on time, takeout seems to be the only option.

I decided it was time to make a change, so I’ve been trying out all kinds of new recipes that will save the day. I need recipes that are simple to put together, don’t take a lot of time to prepare and taste just as delicious as their takeout counterparts!

This slow cooker chicken teriyaki has quickly become one of my favorites. It’s inexpensive and my whole family loves it! You can serve it over rice or your favorite noodles, and you barely have to lift a finger to prepare this.

I even had my kids make this for us the other day! My two daughters, who are 11 and 12, are always excited to help out in the kitchen. I gave them instructions and they were able to put this together completely on their own. You should have seen how proud they were of themselves!

Just Like Grandma’s Apple Cake – Only Better!

If there’s one thing in this world I could not live without, it would have to be this skillet apple cake. Ok, ok – of course I would have to choose my family over this cake but this would come as a close second! You see, this isn’t your ordinary apple cake. It’s not just a bunch of apple slices on top of cake batter – nope, this is way more than that, and you’re about to find out all the delicious secrets.

First of all, it is baked in a cast iron skillet. In my opinion (and I do believe I’m not the only one feeling this way), anything made in a cast iron is always going to be twice as delicious. But don’t worry if you don’t have one – you can bake this in a square pan and still get a delightful cake.

A cast iron skillet isn’t the only magic trick this recipe has to offer. Instead of just adding plain apple slices, you’re going to put together a wonderful concoction that will blow your taste buds away! Hopefully only for a couple of seconds, because you’re going to want to enjoy this with every single taste bud you own.

You CANNOT LOSE With This Recipe!

Summer is not even half way through but we’ve already had plenty of get-togethers and family meals over the grill. Even though I very much enjoy all the BBQ dishes, sometimes I just don’t feel like heating up the grill and staying next to it for an hour to make sure nothing gets burned.

Or, like the other day, when it was pouring down, I would much rather cook dinner in the kitchen. My sister and her family were coming over so I knew I needed a recipe that would feed a larger crowd. My two nephews are all grown up already (gosh, that makes me feel so old) and they’re not picky eaters, that’s for sure!

Fortunately, I had saved a few recipes for a rainy day (literally) and I decided to make these pork spareribs. They seemed simple enough to cook, and more importantly I knew I had pork spareribs in the freezer. I always stock up on meat whenever it’s on sale!

The aromas lingering in the kitchen were to die for, and you wouldn’t believe how fast my nephews emptied their plates and went for seconds!

Ever heard of honey, lemon and ginger tea? It is supposed to be one of the most calming teas, as well as wonderful for soothing a sore throat. It is full of wonderful flavors that really give a sense of calm and peacefulness. I love a good cup of tea on a cold (or even warm!) evening to really give myself some relaxation time. Draw a bath and sit in there for a bit while sipping on anything honey, lemon, and ginger flavored? Yes, please!

 

Well, now you can have all those soothing flavors in your favorite dish. I absolutely love chicken and have it just about every day. Pork, ground beef, steaks… they are all “special occasion” foods to me. I do not eat them with regularity. But chicken, oh my. Every single day! That is why I am always trying to come up with new and improved ways to make it. I do not want to get bored with the foods I make so I try to switch it up. Recently as I was enjoying a cup of tea, I wondered what would happen if I infused all those delicious flavors into a piece of chicken. Well, I wonder no more. It is absolutely amazing!
