So Yummy, You’ll Forget Your Manners

Now that we are in the middle of the Holiday season, I think it’s time to share some of my family’s favorite Thanksgiving and Christmas dishes.

This super scrumptious sweet potato casserole is definitely one of them – and it’s so tasty, I tend to make this year ’round (even though some people consider this Holiday food!) I really don’t care if something is traditionally a Christmas dish. If it’s delicious, I will make it any time of year!

What makes this sweet potato casserole extra special, is the splash of Grand Marnier (you could use Cointreau, if preferred). I think it really gives this side dish a very sophisticated touch, and makes it fancy enough for any occasion. The flavor is not too strong, no need to worry about that! And this dish definitely won’t make you tipsy.

This recipe makes eight servings – maybe six, if you like this as much as I do! It’s very easy to double, if you’re cooking for a crowd, and you’ll even get make-ahead directions for it.

You May Not Need An Entree When You’re Serving These

If there is one thing that I enjoy most about Thanksgiving dinner it would have to be the sweet potato casserole. When I was growing up my mom didn’t just set out a pot of sweet potatoes with a bit of butter and brown sugar on them. Nope. She blended it all up into a creamy mess and baked it in the oven until we had a glorious sweet potato casserole. My favorite! My mother would use lots of brown sugar and butter and her sweet potato casserole always came out divine.

I’ve used my mother’s recipe for every Thanksgiving meal, but last year I decided to try something a little different for a change. I still wanted that wonderful sweet potato flavor, but I was hoping to modernize the dish a little bit. When I came across this recipe on Facebook, I immediately knew this was it!

This is probably considered an appetizer but I made a huge batch of these and served them as a side dish, instead of the traditional sweet potato casserole. My family loved these! They disappeared in minutes and people were hoping there were leftovers, to munch on later at night!

Just Like Grandma’s Apple Cake – Only Better!

If there’s one thing in this world I could not live without, it would have to be this skillet apple cake. Ok, ok – of course I would have to choose my family over this cake but this would come as a close second! You see, this isn’t your ordinary apple cake. It’s not just a bunch of apple slices on top of cake batter – nope, this is way more than that, and you’re about to find out all the delicious secrets.

First of all, it is baked in a cast iron skillet. In my opinion (and I do believe I’m not the only one feeling this way), anything made in a cast iron is always going to be twice as delicious. But don’t worry if you don’t have one – you can bake this in a square pan and still get a delightful cake.

A cast iron skillet isn’t the only magic trick this recipe has to offer. Instead of just adding plain apple slices, you’re going to put together a wonderful concoction that will blow your taste buds away! Hopefully only for a couple of seconds, because you’re going to want to enjoy this with every single taste bud you own.

These Apple Fritter Scones Are To Die For!

I have only three words to say about these apple fritter scones; Oh. My. Goodness. Not only are the scones incredibly tasty, but that mouthwatering glaze takes these to a whole new level. I wouldn’t mind having these for breakfast, lunch and dessert – every single day of the week!

I haven’t always been a huge fan of scones, and that’s probably because I haven’t had much luck choosing the recipe. Everything I’ve tried has turned out rather dry and bland, but that certainly isn’t the case with these scones.

I think it must be the apple sauce that makes these so moist and delicately sweet. I would imagine using homemade apple sauce would make these even better, but I used store-bought and they still turned out heavenly.

As if that wasn’t enough there’s this stupendous maple syrup glaze with a touch of bourbon… Now, I don’t like bourbon at all but apparently the combination of these two has just become my new favorite! Sooo yummy!

The BESTEST Dessert Invention On The Planet

I think I have died and gone to dessert heaven! It’s the only way I can explain what just happened to me when I took my first bite of these pumpkin whoopie pies.

No, it wasn’t the first whoopie pie ever for me, but it sure was the first pumpkin one. And I don’t think I can go back anymore! If you haven’t tried these yet, you’ve been seriously missing out.

I’ve always had a love/hate relationship with pumpkin. I love pumpkin soup and all kinds of savory pumpkin dishes. But I haven’t always been a fan of pumpkin desserts. I had my doubts when my sister said she found an awesome recipe – to be honest with you, I almost skipped this one.

I’m so happy, though, that I decided to give it a go after all. I think I’m going to have to make another batch tomorrow – I doubt there will be any left after my kids get home!

You’ll Never Believe What’s In These!

I’m always looking for new ways to add veggies into our dinner rotation. I’m not really much of a salad-eater; I do love a good salad but if I have to cut, grate and chop a lot to make it, it’s just not going to happen. I’m determined to cook homemade meals from scratch, but hey – I’m not a miracle worker! That being said, I want to make sure my kids eat vegetables every day, and I especially want them to like their veggies. It’s not always easy but this recipe they just can’t resist!

So far my two sons have not particularly liked carrots. I have served grated carrots occasionally and they think it’s “ok”, I also add diced carrots to soups and sometimes casseroles, too. But they’re not the world’s greatest fans when it comes to this orange vegetable, so they were a little sceptical when I was serving this side dish.

Not for long, though! As soon as they had had their first bite, they both said these maple glazed carrots were delicious! And I have to agree with them – these are the tastiest carrots I’ve ever had, and I have a feeling we’re going to be having this often from now on!

If It’s Not Pumpkin Pie, What Is It?

If you’ve taken a good look at our photo, you probably think you’ve got this pie recipe all figured out. However, looks can be very deceiving, and a picture is worth a thousand words. You aren’t staring at pumpkin pie, but rather a sweet potato! Can you believe it?

The amazing thing about it all is that sweet potato pie and pumpkin pie not only look identical, but they taste relatively similar. In fact, when I served this pie to my picky eaters last week for dessert, they didn’t even know that they weren’t noshing on pumpkin pie. Brilliant!
