Potatoes are a staple part of a big breakfast on many tables and restaurant menus.

Most of the time, we opt for white potatoes in one form or another. Some typical ways to prepare breakfast potatoes would be hash browns, home fries, fried, and shredded. Today, we will be veering from the norm and entering sweet potato territory. In fact, our entire breakfast will circulate around the sweet potato because we are going to use them to make a hash. This hash is really simple to make.

You can make this hash quickly in the morning for a hearty breakfast to feed your family. Serve it up over eggs and there you have it; a complete morning meal.

I like to make this hash in the fall when sweet potatoes a more sought after food. However, you can make this lovely little hash at any time of the year. Enjoy!

Are you ready to put your slow cooker to good use?

I bet many of you, if you’re anything like me, already put that sucker to good use but in case that you don’t dust the lid off and get ready to make some fabulous scalloped potatoes. These aren’t just any scalloped potatoes; these are cheesy scalloped potatoes with ham. Now, before any of you start yelling at me and telling me that these are Au gratin potatoes just simmer down a bit. I like to refer to these as scalloped because they are scalloped, I just chose to add some cheese 🙂

Does it really matter what we call our food, anyway? As long as it tastes good we should all be happy, right? Right! These spuds are super easy to make and I love how nicely they cook up in the ‘ol Crock Pot.

If you need a dish to pass at a church potluck or family gathering you should really consider making these cheese and ham scalloped spuds. They are hearty, wholesome, and quite filling. Enjoy!

When it comes to spring desserts I’m all rabbit ears!

I love it when the snow begins to melt and the snow starts peeking out from behind the gray clouds. It puts me in the mood to make fresh desserts that sport pretty pastels such as this cake. By the looks of it, you might think that this cheesecake would be hard to make, but trust me, it’s a spring breeze to conquer. You’ll love eating it, too 🙂 I love using food coloring in desserts because they give the food such a charming presentation.

Now, keep in mind that this isn’t just any old cheesecake. This is a brownie cheesecake! So, you’re going to get lots of chewy texture mixed in with the creamy delightfulness of the cake.

I made this for our Easter dinner and my kids were chomping at the bit to get a taste of it. I had to hide the cake in our outdoor refrigerator so they wouldn’t be tempted to sample too soon. My husband was quite impressed by this yummy dessert, too. Enjoy!

You’ll Laugh Your Way Through Making This

Raise your hand if you’ve gotten takeout more than once this week! I’m kind of embarrassed to say I’ve reached for the takeout menu often lately. I know it’s not the best choice, whether it’s money you’re thinking about or the health aspect. But sometimes (a lot of times, actually) I’m so short on time, takeout seems to be the only option.

I decided it was time to make a change, so I’ve been trying out all kinds of new recipes that will save the day. I need recipes that are simple to put together, don’t take a lot of time to prepare and taste just as delicious as their takeout counterparts!

This slow cooker chicken teriyaki has quickly become one of my favorites. It’s inexpensive and my whole family loves it! You can serve it over rice or your favorite noodles, and you barely have to lift a finger to prepare this.

I even had my kids make this for us the other day! My two daughters, who are 11 and 12, are always excited to help out in the kitchen. I gave them instructions and they were able to put this together completely on their own. You should have seen how proud they were of themselves!

Hey, everyone! How is your day starting off?

Mine is decent. Last night, I pulled out two packages of chicken drumsticks and let them thaw on the countertop overnight. Why? because we are making braized teriyaki chicken, today! In the past, I’ve avoided making teriyaki recipes because they always seemed daunting, but not this one. Yes, there are a few “weird” ingredients that you may not have in your pantry but don’t let that stop you from making this amazing dish. Use what ya got!

My kiddos spied the chicken drummies out on the countertop this morning before school and they got excited because they love it when I make “chicken on the stick” which is code for chicken drumsticks.

I’ll have some happy, hungry eaters today after the bus lets them off. This is a very good thing because sometimes, my kids can be a bit picky. Not tonight! Enjoy 🙂

Are you in the mood for a real stick-to-your-ribs kind of meal?

Well, you’ve stopped by the right recipe because these Po’ Boy sandwiches are nothing less than stellar.  First, you start off with a slow cooker full of onions and peppers and Italian seasoning. You get those bad boys all cooked up nice and soft and then you begin cooking your glorious beef roast. Seriously, this is heaven in a pot. I like to let the beef cook slowly all day long so that the meat is incredibly tender and succulent. Serving it with French fries or potato chips always pairs well. You might even want to mix up a batch of coleslaw to go with it. Yum!

My kids and husband love it when I make these Italian beef Po’ Boy sandwiches. When there are leftovers my husband will take them to work the next day for his lunch.

Have You Tried Making These Yet? You Really Should!

I am running out of excuses to skip a proper breakfast… I’ve been using lack of time as an excuse for a while now, but lately I’ve tried so many wonderful, easy and super fast breakfast recipes that I kind of feel silly saying “I just don’t have the time”. Sure – a slow cooker helps a great deal if you’re busy in the mornings, but there are other ways to prepare a quick, awesome breakfast, too.

German pancakes are incredibly simple to make and they taste so amazing, I could have them every single day of the week! You only need a few minutes to whip this up, and you can go on and get ready while it’s baking in the oven.

This oven pancake is delicious and the kids are crazy about it! If they could have their way, we would have this year ’round, every day. If you’re in a hurry, a dusting of powdered sugar on top will do. But you could turn this into a really fancy breakfast just by slicing some bananas and drizzling chocolate sauce on top!
