Great for Mexican Monday – or ANY day!

It doesn’t get any easier than this! All you need is a few simple ingredients, a 13×9″ pan and about 40 minutes to get this incredible casserole hot and bubbly on your dinner table! We all know what it’s like to come home to a group of hungry wolves. Or worse; to be a hungry wolf yourself! There’s no time to slave away in the kitchen for hours when your tummy is screaming “Feed me!” My panic button-solution for those days is this stupendous, cheesy burrito casserole.

Not only is it quick and easy to make, but it’s also incredibly delicious. When my kids are “hangry”, all I have to do is tell them I’m making this, and they’ll start behaving like angels. Ok, maybe not angels – but at least they’ll calm down until dinner is ready!

This recipe is enough for 8 servings, depending on how hungry everyone is! I would definitely make a double batch just in case. You can freeze the leftovers, if there are any! Or you could add a layer of taco rice to make sure there’s enough for second servings.

Is This The Easiest Enchilada Recipe Ever?

I’ve probably mentioned this before but I really love traveling. Whenever I get back home from a vacation, I get into this mood that I call “post vacation blues”.

I feel sad, sorry and frustrated, and I know there is no other cure than to start planning for another trip again. Well, in an ideal world we would all have plenty of money and free time to travel anywhere, anytime. Unfortunately I still live in a reality where I need to work for a living, and I’m only able to take a trip about once in two years. So what can I do in the meantime, to make the post vacation blues go away?

Food is the answer to so many problems, this one as well! I have started to cook a special dinner once a week – I pick some of the countries I’d love to visit, and choose a recipe that is common to their cuisine. This way I can pretend for at least one night that I am on vacation, in an exotic place, and it makes it much easier to wait for my next trip again!

This freezer meal is a secret every busy mother should know.

We all have had those days where we feel too lazy to cook a meal or just don’t have time at all. This creamy and heavenly palatable enchilada goodness can save the day. The aroma of this mouth-watering dish can already make you feel full.

“The enchiladas are loaded with cheese! I add in spinach too make them somewhat healthy:) I mix the spinach mixture with sour cream or Greek yogurt to make the enchiladas extra creamy. The enchiladas also have Old El Paso Green Chiles and Green Chile Enchilada Sauce! Easy To Make, Even Easier To Gobble Up!

Mexican food is a big hit in our house. My husband likes his Mexican meals so spicy and hot that I almost want to keep a fire extinguisher nearby. I, on the other hand, like mine a little milder.

What I love about fajitas is that I can make the filling somewhat hot and spicy, and I can add mouth burning salsa for my husband without having to eat that myself. It’s a win-win situation! Usually I also make a double batch of the filling and we eat the leftovers with rice for lunch the next day. Which is awesome, considering how busy I am with work! These fajitas are extremely simple to make and I guarantee this recipe will immediately become one of your favorites, too.

So many people get Mexican takeout just because they think it’s difficult to make at home. That is so not true! This dish is so simple you could put it together even if you’ve never cooked a full meal. And you’ll save a bunch of money, too!
