What Are You Having For Breakfast Tomorrow Morning?

If you are as tired of oatmeal, toast or granola as I am, then you’re going to love this wonderful breakfast casserole recipe I’m about to show you!

This recipe certainly does have a Southern flair to it, though its hearty flavor can be enjoyed by people of all backgrounds, I think. This sausage biscuits & gravy casserole is simple to put together, too! And I guarantee; once you’ve tried this, there’s no going back to your old morning routine.

Though I don’t indulge in breakfast often, at least not during the standard breakfast hours, my Deep South background certainly gives me plenty of tasty options when I want to do so. A good number of them don’t require much toiling in the kitchen at all, and some can even be cooked the night before and easily re-heated the next day, with no compromise in flavor. This savory casserole is just such a recipe.

The great thing about this casserole is that you can also serve it for lunch or dinner. I like to make a large enough batch to have some leftovers – in my opinion, this dish only gets better when reheated!

This tuna noodle casserole is not only easy to make; the recipe is also wonderfully versatile and you can get new flavors every time, without a hassle! This is one of my favorites for those days when I simply don’t have time to cook. You can get the prep work done in 10-15 minutes, depending on what kind of noodles you are using, and the rest is just waiting for it to be ready.

It’s not like your ordinary tuna noodle casserole, though! What makes this special is the green chilies and the crushed tortilla chips. They give this casserole some nice, Mexican flavor – but you can always omit the chilies and use crushed potato chips instead, if you want a more classic taste.

Is This The Easiest Enchilada Recipe Ever?

I’ve probably mentioned this before but I really love traveling. Whenever I get back home from a vacation, I get into this mood that I call “post vacation blues”.

I feel sad, sorry and frustrated, and I know there is no other cure than to start planning for another trip again. Well, in an ideal world we would all have plenty of money and free time to travel anywhere, anytime. Unfortunately I still live in a reality where I need to work for a living, and I’m only able to take a trip about once in two years. So what can I do in the meantime, to make the post vacation blues go away?

Food is the answer to so many problems, this one as well! I have started to cook a special dinner once a week – I pick some of the countries I’d love to visit, and choose a recipe that is common to their cuisine. This way I can pretend for at least one night that I am on vacation, in an exotic place, and it makes it much easier to wait for my next trip again!

These Cheesy Enchiladas Make for the Perfect Weeknight Meal

Enchiladas are some of the most satisfying of Mexican dishes, from the tortilla being stuffed and then drowned in spicy sauce, and covered in stringy cheese, to the crispy baked shells.  This is one mega Mexican meal that won’t let you down.

This recipe makes about 8 servings and is ready in under an hour.  Serve it with a side of sour cream, salsa, and guacamole, to top of the meal.

You Won’t Recognize These Enchiladas With White Sauce!

How many of you love enchiladas? Well I certainly do! Especially chicken enchiladas, but I have to admit I had never eaten white ones before. I had my doubts when I decided to try this recipe – but these are absolutely delicious!

 

 

I used the recipe as is, except in my family they do not like chicken shredded. So I just made these with chunky chicken pieces and they turned out fabulously. This would make a great potluck or tailgate dish. And if you know you’re going to have a busy day, you could prepare the tortillas the night before and just make the cheese mixture the next day.

 

You could also easily turn this into an enchilada lasagna! Instead of rolling each tortilla, spread them on top of the chicken and sauce in layers. Yummylicious!
