If You Thought Meatloaf Isn’t Fancy Enough For Special Occasions – Try THIS One!

Growing up, my mom would make meatloaf at least once a week. My sisters and I always enjoyed having this meal and so did my dad.

She would make the meatloaf with mashed potatoes, green beans, and usually sliced up sharp cheddar cheese. My family was obsessed with brick cheese and the sharper the better. I always thought the cheese gave a nice zing to the meatloaf when eaten together. Anyway, I grew up eating mom’s basic meatloaf recipe that tasted like heaven on earth.

After I got married I started experimenting with making other forms and flavors of meatloaf. One time, I used ground turkey instead of ground beef. It made the loaf of meat taste very gamey. I won’t be doing that again lol! Recently, I came across a recipe for applesauce meatloaf on Facebook and new in my heart that it was going to be a winner. And guess what? I was right!

What would you serve with this mouth-watering pork?

My nephew graduated from high school last spring. It was an exciting, yet terrifying day for me. I was proud of my sister’s oldest son, but that meant that my boy was going to be graduating the following year, as he was only one birthday behind him. We all went and had a spectacular time celebrating the event. It was nice to catch up with everyone and to talk to my first nephew about what his plans were for the future. He decided that he was going to join the military and do a few years there before going to college. That sounded like a fine plan to me. He was sure of himself, so I was standing behind him.

When it came time to eat, I saw that my sister and few of her husband’s sisters had prepared the entire meal themselves. That was impressive. I didn’t even bring a dish to pass, but she never said anything so I didn’t feel too bad about it. The main entree was a BBQ pork sandwich.

I asked my sis about where she got it from, and she said that it was her husband’s mom’s recipe from many years ago. It was fantastic! The meat was so juicy and tender, I went back for a second helping!

You’d Better Make Two – This Goes FAST

I remember when I was getting ready to go off to college. It was a bittersweet time for me. I was so ready to embrace the world and see how I would be able to manage things on my own. At the same time, I was just a little bit worried about leaving home. My mother always took care of our meals and pretty much everything related to our everyday life. I thought I might get a little homesick without her dinners, so I asked her to teach me a few of her brilliant recipes. She showed me some of my favorite ones, that would also be easy and inexpensive to make.

I have loved this cheeseburger pie for as long as she has made it! Ever since I was just a kid, it was my favorite meal. My siblings and I wanted this to be on our dinner rotation at least once a week – and mom agreed because it was such a simple way to cook dinner!

While in college, I made this for my friends quite a few times, too. They called it the burger pizza, which I thought was a little funny, since this isn’t really a burger or a pizza! It does have that yummy cheeseburger flavor and it kind of looks like pizza, but it’s better than both of them combined!

About a few months ago, my husband and I went to visit my mother in law and her family outside of Atlanta, Georgia. The town she lives in is a small hillbilly town where everyone knows each other. There was only one hotel in the area and just one supermarket. There are a few shops and under 10 restaurants in the whole town. It really seemed so out of place right next to the hustle and bustle of Atlanta, but we knew it would be a pretty cool town if we stuck around.

 

Anyways, when we showed up, I had come down with a case of Whooping Cough. I was coughing left and right and had an upset stomach every time my cough came back. I even had to get to a CVS (mind you, outside of the town because they didn’t’ have any there) to get some meds at 2am. On the last day we were there, my mother in law felt so bad that I was so sick that she made me her signature dinner. And guess what? For the rest of the day I had no cough. I had never eaten it in my life and knew I wanted to make it at home.

Going to Grandmas house on Sunday was always a treat. Salisbury steak was on the menu at least twice a month. I loved when we got there early enough for me to help her cook it. The smell of the mushrooms and carmelized onion was enough to make your mouth water. This is a simplified casserole version that will knock your socks right off!

I’m not a big fan of fast food restaurants; however, I will make an exception for White Castle. There’s just something about those tiny, little burgers that tantalize my taste buds and send my belly into a trance. Imagine Homer Simpson when he drinks a Duff Beer. Yeah, that’s me at White Castle.

 

I was a little skeptical at this copy cat recipe because, in my experience, recipes like these rarely turn out the way that you want them to. Much to my surprise, White Castle casserole surpassed my expectations. Not only did I absolutely love it, but my husband, kids AND mother-n-law scarfed it down like nobody’s business. My mother-n-law is a very hard woman to please. She was pleased 🙂
