Oh Em Gee, These Are Incredible!

I’m so excited about today’s recipe that I almost can’t sit still! I’m crazy about potatoes, any way you make’m, so I have collected a vast amount of potato recipes over the years. I didn’t think it was possible to top them – you see, I figured I had already found and perfected the best of the best recipes out there. It turns out I was wrong, and I’m actually really happy about that!

I came across this caramelized roasted potatoes recipe on Vegan Food Lover’s channel, and it is TO DIE FOR. Honestly, I could eat these potatoes seven days a week and twice on Sunday! Vegan Food Lover really has found a heavenly combination of ingredients for that marinade – and I didn’t even realize you could marinate potatoes!

I highly recommend checking out all of his recipes; that’s what I’ve been doing for the past couple of days, and I’ve found quite a few favorites already. Let’s just say I’m going to pamper my family with these incredible dishes for the next couple of weeks, and you all should do the same!

Have You Tried These Yet? You REALLY Should

My mother-in-law makes killer pork chops. There really is no other way of describing them; they are the most delicious, mouthwatering and addictive pork chops I’ve ever tasted. I was surprised when my husband told me he has actually gotten a little tired of them – he said they used to have them for dinner every single Sunday, and “enough is enough”.

So, even though I think her pork chop recipe is amazing, I had to find a different one if I was ever going to cook pork chops for my own family. And I gotta tell you, these Southern fried pork chops from Patrick Barton are pretty darn awesome, too! If you ask my husband, he will tell you these are the best on the planet. I kind of agree with him… but please don’t tell my mother-in-law I said that!

Patrick has come up with the perfect method to create that scrumptious crust. I highly recommend having a look at all of his recipes – there are plenty and they are all delicious! Thanks, Patrick, for sharing them with all of us!

This Flavorful Meatloaf Recipe Is As Easy As It Gets

Want to hear something funny? Before we had kids, my husband was a picky eater. Well, he didn’t cringe or complain about anything I cooked, but since he can’t even tell a tiny white lie with a straight face, I always knew when he wasn’t particularly fond of the food I was serving. He especially didn’t like meatloaf, but it took me a long time to figure out that was probably my fault.

You see, as a young wife I did not have that much experience in cooking, and I was using the first recipe I happened to get my hands on. I didn’t think it was out of this world, either, but I had no idea how to make it better. Still, I wanted to serve delicious home cooked meals so I started collecting different kinds of recipes and trying them out, one by one, until I hit the jackpot.

I still haven’t found the perfect recipe for some dishes, but I certainly have found one for meatloaf! This super scrumptious one, from Lynn’s Recipes is what we call Daddy’s Favorite these days – my husband and kids are crazy about it! I’m so happy Lynn shared it in her awesome vlog.

So Much Tastier And Healthier Than Their Store-Bought Counterparts!

I had heard of all kinds of horror stories of what’s in those store-bought, or fast food restaurant chicken nuggets. I’m not going to repeat them here, but let’s just say I hadn’t eaten a single nugget ever since I first heard those rumors. Which was sad, because I used to really love them.

It had never even crossed my mind to make chicken nuggets at home – I thought I would need a deep fryer for that, and I wasn’t going to get one for just this dish. But then I came across Onedio Co’s post on homemade chicken nuggets, and there was no deep fryer involved!

They made it look so simple with just a handful of ingredients! And here I was, thinking it would be rocket science, haha! I tried their recipe and the chicken nuggets turned out ahh-mazing! I guarantee we are having these at every party, get-together and game night from now on. They are really easy to make!

If You Love Lemon, These Luscious Layers Will Sweep You Off Your Feet!

I was walking down the street last week, in the freezing cold wind, desperately hoping I could live somewhere else during the winter months. It’s not like I’m new to snow and ice – I’ve lived here all my life, but I just can’t seem to get used to it. I would happily move to Florida or pretty much any place where you can wear T-shirts and flip flops all year long.

To make myself feel better I decided to make the most summery dessert I could think of! Lemon delight is something we always had in the summer when I was little, although there’s no reason why it should only be considered a summer dish.

I found an awesome recipe on Crouton Crackerjacks and I thought it looked super easy, so I gave it a try. It wasn’t just easy – it was also way too yummy and I probably would have eaten half of it on my own, but my family made me share! Everyone I Know Is Crazy About This Fantastic Cake!

The older I get, the faster the years seem to fly by. It’s hard to believe we only have a couple of days of this year left – even though it seems like it was just a couple of months ago that I was shouting “Happy New Year!” It seems, when you’re young, you can’t wait to grow up as fast as possible. And when you’re getting old, you wish you could go back to being a kid again. Haha!

When it comes to New Year’s resolutions, I’ve decided not to waste a moment of my life anymore. What that means to me is that I will try and spend my time doing what I think is important, instead of spending those precious hours and days on things that don’t matter to me.

Ok, well maybe baking cakes isn’t that big of an issue for me but I still don’t want to spend too much time making them. That’s why I love recipes like this one from TheCulinarycorner! Very basic ingredients, very little preparation, yet a very awesome result!

I Wouldn’t Mind Eating This For Two Weeks In A Row!

Being the work-from-home parent in our house, I’ve decided it’s my job to plan the menu and take care of all the dinner preparations.

My husband would be more than happy to take turns, but since I personally hate grocery shopping I’m just letting him do that, instead! To me, that’s a big win! To be honest with you, ever since I got my first slow cooker, making dinner has been a breeze. I didn’t think meals would turn out as delicious in the crockpot but I was so wrong! Some of them turn out even better than their stovetop counterparts, and I guess that’s because they get to slowly cook to perfection, for hours.

This recipe from the Slow Cooker/Crockpot YouTube channel is one of my favorites. I had made Salisbury steak a hundred times before, but never in the crockpot. Once I tried this recipe, there was no going back. I’m so glad I came across their video, you should check it out, too!
