My Father Loved This Meal

Though you will probably have the biggest craving for comfort food like this in winter, something this soothing and savory can be enjoyed any time of year.

Throw together this Smoked Sausage & Potato Bake with a few fairly common ingredients, and you will have a hearty meal for the family in under an hour! When she was pressed for time, or just wanted to make good use of a few extra ingredients lying around, Mother often would slice up some sausage and onion, cook it in olive oil with a few basic seasonings, and serve that over rice.  It was delicious but oh-so-simple!  This is a baked variation of that, with potatoes added to the mix.  Oh, and did I mention that it has CHEESE in it?  So yummy!

This is such a hearty meal and you don’t have to spend hours, slaving away in the kitchen, to serve this to your family. I have a couple of very picky eaters in the house, and they’ve both told me this was the best meal they’ve ever had. So you know it’s a winner!

An Easy But Delicious Finger Food Recipe

These Easy Cheesy Potato Skins are about as simple an appetizer to make as there is, but you will love the flavor! The bacon (and green onion, if you choose to include it) add a nice texture contrast in addition to giving the appetizer more mouth-watering flavor depth. These are great for parties and at-home snacking. Who doesn’t like some tasty finger food now and then?  I certainly do.  Though these potato skins make for an excellent party appetizer, they are more than easy enough to make for everyday snacking.

The kids will love them, I assure you. They’re great by themselves, but with a simple dip, they make for a nice small meal.  And you won’t have to deal with any complicated prep–no elaborate scooping or any other such medium.

Basically, just slice a few things, and the oven does the rest of the work for you.

For me personally fall has always been that time of year when I get carried away making all kinds of wonderful soups. I’ve tried so many different recipes – sometimes less successful, but this is one that definitely surprised me. I’ve made it twice already, tweaking the seasonings a little, and it has been a great hit! The best thing is, after a summer of heavy BBQ meals this is the perfect way to get back to a healthier kind of eating. This sausage, spinach and potato soup is surprisingly hearty and flavorful for only being around 300 calories per serving.

This is a great way to serve a healthy meal that nobody in your family will know is low calorie, unless you decide to tell them. This recipe is great to make in bulk and is easily re-heated in the microwave. We all know soups get even better the next day, when all the wonderful flavors have really come together!

This Blooming Baked Potato recipe is a really clever and impressive way to show off your culinary skills at your next dinner party or family get together!

This is a classic baked potato combo of cheese and bacon–but in a very fancy and extra-savory package.  The “Blooming” of the potato makes it cook a little differently, too, and I like the texture of this dish much more than I do with most traditional ways of serving a baked potato.

You’re going to look like a professional chef serving this to your friends and family! Just make sure you have enough – because this tastes just as delicious as it looks!

I know some of you who are die hard mashed potato aficionados will be saying, “A Casserole?” But as the original poster states, after one bite of these, you will be won over. This casserole is not only extremely tasty – it has a great texture, as well. And here is the kicker; it’s really easy to make! So please give this delicious and easy mashed potato recipe a try, and let us know what you think.

Here’s a great tip from one of the readers, on how to make this ahead:

A holiday lifesaver: moving mashed potato tasks to a day or two before. For more traditional potatoes skip the bread crumb/cheese topping. To mitigate the sour cream cut that by half and sub in a little softened cream cheese and some warmed milk (skim!), which also provided the extra moisture others have noted. Kept for 2 days in the fridge in an ordinary foil steam pan, potatoes reheated perfectly (an hour at 350 – not 400) and tasted “just made.”
