Just bite into the moist corn muffin to find your breakfast surprise.  There are so many ways to make an egg, but I bet you never made one this way!

This recipe is a lot easier than it looks, and twice as delicious.  This recipe makes 6 jumbo muffins, or they can be halved into 12 to share.  Serve with some home fried rosemary potatoes, and you’ve got yourself an amazing breakfast to start the day!
