We’re all used to the regular form of pizza. Piping hot dough smothered in tomato sauce, cheese, and pepperoni, right? Sort of, but that’s not the type of pizza we are making today. Today, your pizza will be smeared with sweet cream cheese and topped with the fresh fruit of your choice!

 

Now, if that isn’t enticing enough, the crust of this fruit pizza…are you ready for this? The crust of this pizza is a gigantic SUGAR COOKIE. Talk about a big crunchy bite of YUM. I love making fruit pizza for spring and summer gatherings. Everyone gobbles it up like the world is about to end, but can you blame them? Just look at the gorgeous, colorful presentation. Beautiful.

Are you still eating your chicken salad with *just* mayonnaise? It’s time to dress up the blandness and take this lunch staple to the next level.

Adding in juicy grapes give you a little pop of sweetness and using romaine lettuce prevents it from being overly mushy. Add in some other goodies like tomato, cheddar cheese, and a mixture of ranch with the mayonnaise for an extra boost of flavor. This recipe calls for using canned chicken, however feel free to use rotisserie chicken for a fresher alternative! Make this for a brunch get-together, or as an everyday midday meal – you’ll love it!

Usually the words “chocolate cake,” and “low in fat,” are never in the same sentence, especially with a dessert that looks this good.  Don’t let the fruit throw you off, as they say, it truly “takes the cake.”

Ready in a hour, this makes an 8″ cake, and never seems to last.  It’s lighter than normal, so you can serve this with a heavier dish for dinner, with no worries.
