brewed coffee, buttercream, buttermilk, cookies, dark cocoa powder, egg whites, Flour, sugar, vanilla, whoopie pie

Are whoopie pies the one thing that’s missing from your life? Fill that void with these soft chocolate pillowy cookies that sandwich a layer of fluffy swiss meringue buttercream filling.

The cookies aren’t really much of a cookie in that they are more of a cake-like texture, which just makes them that much more amazing. Be sure you have some strong brewed coffee on hand, not just for sipping but also for the ingredient list! Yes, that’s right, coffee makes an appearance in this rich dessert!

I can still remember the very first time I ever had red velvet cake. It seemed almost surreal to me – how could a cake be so beautifully red and rich, and how was it possible that I hadn’t heard of it before? I just had to give it a try – and as soon as I had the first bite, I knew my life would never be the same. It was heaven! All I could think about was how I had been missing out on such a bliss for my whole life. Of course, this happened years ago already – and I’ve been doing my best trying to catch up! I’ve tried so many different red velvet recipes, some with a modern twist, and some a little more traditional. Like this one, for example.

Sometimes, it’s best just to stick to the classic recipe. This Vintage Red Velvet Cake is just about perfect, as far as I can tell. And that Vanilla Buttercream Frosting goes beautifully well with it, too. There’s a reason why this recipe is a classic.

If you want a fairly easy, delicious cake to bake, but you don’t want to settle for working with a mix, this Louisiana Crunch Cake is a nice choice. It’s a great Southern cake recipe that has become the favorite of so many bakers over the years.

I’m not sure exactly why this is considered a “crunch” cake. Maybe it’s the soft but crisp texture of the coconut? I just know that it is really moist, soft, buttery, and topped with a yummy buttercream glaze. I happen to think that it’s even better than the cake of the same name sold under the Entenmann’s brand. Even people who aren’t big fans of coconut will find plenty to love about this cake, and you don’t exactly have to be a master baker to make it, even though it is 100% from scratch.

These sugar cookies with pink buttercream frosting look beautiful and taste as great as they look. This family-friendly recipe is very simple to put together (and once you have the dough made and chilled a bit, rather quick to bake, too).

If you want a yummy baked dessert treat that is easy enough for the little ones to “help” you make, this is perfect for that. Of course, if they are anything like how I was as a child, you may have to make a bit of extra batter to allow for generous licking of spoons and bowls (or make the cookies just a bit smaller), but hey, no harm in that, right?

This Cake Really Is a Dream!

This Vanilla Dream Cake is sure to be a winner at any gathering. A little assembly is required, but with prep, baking, and assembly time all adding up to about an hour and a half, it’s not super-complicated and not any all-day labor of love.

I love a good chocolate-based dessert now and then, but I must confess that I love a rich vanilla flavor as much as I love chocolate. I don’t know if that puts me in a minority or if I am just not that picky about what flavors that I will try, but I don’t believe that a vanilla-based recipe has to be boring. Done right, vanilla actually can be rather exciting. This vanilla dream cake really lives up to its name!

My husband is not a fan of cakes (I know, there’s something profoundly wrong with him…) but this cake here is an exception. I swear he could eat half of it in one go – and the other half a couple of hours later! This is definitely a cake that will please even the pickiest of cake eaters!
