I rarely eat fish for dinner, which is a shame. I know you should eat fish a couple of times a week because of the health benefits; it’s lean, rich in protein and the fattiest fish have all the good fats and acids. And I happen to like all kinds of fish very much!

So, why is it that I rarely eat it, then? It’s because I’m lazy. Or maybe I should say worried. I’m worried that it’s somehow really difficult to cook fish so that it becomes flavorful and moist instead of dry and tasteless.

But this recipe turned my world upside down! I’ve never made fish in such a simple way – and it turned out so perfectly, I doubt I’ll ever make fish any other way again! The lemon gives the fish such a wonderful, fresh flavor. The best part is that you can use whatever fish you please – this recipe works well with any of them.

You’ve Been Doing It Wrong All These Years!

I am a big fan of pizza and all of its variations. I’ve tried every single pizza place in our town – ok, not only our town but pretty much every town I’ve ever visited, haha! For such a long time it was a mystery to me how they were able to make their pizzas so delicious. I couldn’t understand why my homemade pizza didn’t turn out that way, even when I was using the same toppings and trying my best to imitate the crust as well. I must have gone through dozens of recipes, and I was getting desperate.

It’s not that I didn’t think my homemade pizza was good – they all turned out very tasty and we certainly never had any leftovers! But still, something was missing and I couldn’t let it go until I found out what it was. I swear, my husband thought I was going crazy when I spent so many hours trying to figure it out…

All that work paid off eventually and I now know what it takes to make the best (in my opinion) pizza on the planet! And it’s not difficult at all!

When I was a kid, I can remember my mother making a hot, steaming casserole pan full of rich and syrupy baked beans. They were so good to eat! Granted, when dad and grandpa ate this concoction, they often made music together, if you get my drift. LOL! Many people feel that soups are perfect for the colder months of the year. In fact, so do I – nothing will keep you warm better than a hot bowl of your favorite, spicy soup! Our friends in France deserve a round of applause for their creation of the French dip sandwich. I mean, seriously, this recipe is dripping (literally!) with flavor. I’ve loved French dip sandwiches for as long as I can remember. My mom used to make them all the time for our family as I was growing up.

 

As an adult, I carried on the tradition of making French dip sandwiches for my family. I love these sandwiches but making them is a bit laborious time consuming…until I found this recipe. Instead of standing over a pot, you get to toss all of your ingredients into the slow cooker and walk away. Read a book, go shopping, clean your house; it doesn’t matter because you have dinner simmering in the Crock. Nice, eh?

Mmm, green beans! I really love them as a side dish, but sometimes I want to add all the ingredients into one, big, delicious mess. Yes, I did say mess and I think it’s a perfectly suitable word for describing a tasty meal!

Of course I enjoy a dish that is carefully finished to the smallest detail, but occasionally a mess is just so much better and easier. It doesn’t have to look perfect to taste perfect! Simple ingredients always give you the best results. Some potatoes, beans (feel free to use canned or fresh) and bacon or ham.

Of course you could add any of your favorite veggies – I often add onions and mushrooms because I like the way all the flavors blend together nicely. Adding more ingredients will help turning this into a full meal, and paired with fresh, crusty bread and a nice salad it will become a great weeknight dinner.

You may also want to consider making a double batch! In my opinion, the leftovers only get better in the fridge, and they make a scrumptious lunch the next day.
