I rarely eat fish for dinner, which is a shame. I know you should eat fish a couple of times a week because of the health benefits; it’s lean, rich in protein and the fattiest fish have all the good fats and acids. And I happen to like all kinds of fish very much!

So, why is it that I rarely eat it, then? It’s because I’m lazy. Or maybe I should say worried. I’m worried that it’s somehow really difficult to cook fish so that it becomes flavorful and moist instead of dry and tasteless.

But this recipe turned my world upside down! I’ve never made fish in such a simple way – and it turned out so perfectly, I doubt I’ll ever make fish any other way again! The lemon gives the fish such a wonderful, fresh flavor. The best part is that you can use whatever fish you please – this recipe works well with any of them.

Now, here’s a recipe I’ve been wanting to share with you forever! This is one of my favorite meals to cook – because I hardly have to cook at all to get this done! It’s perfect for those midweek days when you have to rush out the door again, before you’ve hardly had a chance to step inside after a hard day’s work.

I love setting my slow cooker in the morning, literally forgetting I even did it, and then coming home to a wonderful surprise when all these beautiful aromas greet me at the door.

Sometimes miracles happen and I have time to make pita bread pockets from scratch – I always make a large batch and freeze as many of them as I can, so that I can whip up this crazy easy meal on a busy day again.

But there’s no need to worry if you’re schedule is too full to even think about making your own pita pockets. This grab-and-go meal tastes just as great even if you’re using store-bought ones.

This chicken recipe is so easy to follow! In just a few steps you’ll have a glorious chicken dinner on the table and your family will think you spent the afternoon slaving over a hot stove. We’ll just let them keep right on a thinking that haha! Farmer Jack’s cheesy honey chicken breast bake is seriously the cow’s moo. My kids and husband absolutely loved this dish. The harmony between the flavors is outstanding. I love how the honey and dijon mustard complement one another.

 

 

I have made this recipe twice now and the first time I served it with mashed potatoes, gravy, and green beans. The second time I served it over a bed of wild rice and  a side of applesauce. Both ways were equally divine.
