I know some of you who are die hard mashed potato aficionados will be saying, “A Casserole?” But as the original poster states, after one bite of these, you will be won over. This casserole is not only extremely tasty – it has a great texture, as well. And here is the kicker; it’s really easy to make! Here’s a great tip from one of the readers, on how to make this ahead:

A holiday lifesaver: moving mashed potato tasks to a day or two before. For more traditional potatoes skip the bread crumb/cheese topping. To mitigate the sour cream cut that by half and sub in a little softened cream cheese and some warmed milk (skim!), which also provided the extra moisture others have noted. Kept for 2 days in the fridge in an ordinary foil steam pan, potatoes reheated perfectly (an hour at 350 – not 400) and tasted “just made.”

Wow, these drunken cupcakes will be the life of the party for any occasion (other than your one-year old’s birthday party)! But seriously, these cupcakes have a depth of flavor that you just cannot get out of a regular chocolate cupcake. The texture is also amazing; they are moist and have the perfect balance of denseness. The secret to that is obviously the Guinness and the sour cream. Who knew! I would have been using a stout and sour cream in all my cupcakes if I knew that they would turn out like this! In addition to the yummyness of these, they are relatively easy to make – no harder than any of your standard cupcakes.

This honey roasted chicken recipe comes out perfectly! In fact, the proof is in how well it smells as it’s cooking. I mean, wow, just wow! I was cooking this meal up the other day and my husband came in from working outside and was wondering how long before we could eat this flavorful masterpiece. Now, if you know anything about my husband, it’s that nothing, not even food, can pull him away from his work. You can’t ask for a better balance between savory and sweet.

It was perfectly cooked, tender and juicy inside but with the skin crispy! This really is reminiscent of some down home southern cooking for sure. The original poster of this recipe said that she liked this as a child so this is some home cooking, just not sure from what area of the country.
