With only 3 minutes of prep time, this easy, cheesy spinach lasagna is a perfect weekend go-to recipe every one can enjoy.  Serve with a side of crusty bread to really make a meal.

This recipe serves 6-8 people, and because it is a slow cooker recipe, it’s ready in 5-6 hours.  So go ahead and save this one for a warm family weekend, meal, and just throw the simple ingredients together in the morning.

The delicious lasagna that most people know comes with a generous helping of meat, but with all the yummy zucchini and cheese flavors, you won’t miss the meat when you have these Three-Cheese Zucchini Lasagna Rolls.  They’re also rather easy to put together. This is the perfect recipe for those days when you want something healthy and delicious, but don’t have the time to spend hours in the kitchen. And even the pickiest of eaters will love their veggies this way!

 

I confess that I love my meat dishes plenty, but it’s nice to mix it up, sometimes.  And I do occasionally have vegetarian guests over, so it’s nice to have something tasty for them. These tasty treats are also VERY freezer-friendly, so you can make plenty in advance, so long as you have the freezer space.

This Is The Vegetarian Lasagna Of Your Dreams

I have to say that normally I like meat in my lasagna. I was putting up this recipe for my vegetarian fans, but it looked intriguing so I decide to give it a try. I didn’t really have high hopes for this (like I said, I like meat) but this was so much more than I ever imagined! If you knew me you’d never believe that I’m saying this – I actually think this was better than any lasagna I’ve ever had before!

 

 

One of the things that made this dish standout to me was the use of the walnuts in the pesto. I love pesto, anyway, but that was just the tiny bit of extra that made this one delicious. I will most certainly use this pesto recipe for other dishes that contain pesto, it’s that good.
