Carrots go well with a lot of things, but sometimes, you want to tweak the flavor a bit to keep things interesting. These Oven-Roasted Ranch Baby Carrots are just such a nice tweak, with the help of a simple but delicious homemade ranch seasoning mix.

Hey, sometimes, the simple things are a huge hit. Everyone used to rave over Mother’s carrots, and she made them so simply, she didn’t even really consider it a recipe. This is a simple side dish, but that ranch seasoning mix really delights the palate and probably would go well on a lot of other vegetables. Oven-roasting the carrots gives them a lovely crisp surface while leaving the inside nice and tender, just how I like it. The best part is; all the kids love it, too, so they’ll eat their veggies without a single complaint!

Tater tots make for a nice side option for a lot of meals, but if you want something similar but healthier, or if you just want to mix things up a bit, these Zucchini Tater Tots are a good option, and you only need five ingredients (plus a bit of salt and pepper) to make them.

I know that it isn’t properly zucchini season anymore, but I still have a soft spot for this vegetable and like to make good use of it when I can. It will take 45 minutes max to put this together, and with a food processor, you can speed it up a lot more, as these zucchini tots only take about 18 minutes to bake. In addition to being a good, healthy side dish, they also make for great party or tailgate food and taste good even at room temperature.

Even for those who aren’t big on veggies, this dish is sure to please. Caramelized bacon engulfs tender asparagus spears, for a side that is sure to sell out! Loaded with flavorful seasoning, and baked to perfection, this dish makes the perfect accompaniment to any tender meat dish.  You can also grill these, if you so choose, for a little smoky flair.

Asparagus is one of those veggies that makes people either smile or cringe. I did not always like it, myself – until I found out the reason. I had just been cooking it wrong the entire time! This recipe is one of my favorites and I’ve been able to convert serious asparagus-haters with this one! Once you’ve had a taste of these crunchy things with the delicious bacon, you can’t go back. These are one of my holiday side dish favorites!
