The Best Burger On The Block!

I had my brother-in-law, sister, and their family coming to stay with us at our summer home on the lake.

They are super busy, so they don’t often make it up that way. Whenever they do come, I try and make it the best experience possible. It’s kind of in the middle of nowhere, so we do all of the cooking and eating right there at the lake. For the most part, we cook over the open fire or on the grill. As long as it’s nice out and not raining, you can bet that we will all be outside. We even nap outside. It’s just such a relaxing place to be.

The last time they were coming my brother-in-law actually requested that I make cheeseburgers. That was odd because we usually do ribs or steak or some big cut of meat like that. Cheeseburgers, okay then.

These Juicy Lucy burgers had the cheese on the inside, and I knew they were going to be great fresh of the grill. They got gobbled right up! My sister and niece don’t like ground beef so I did theirs with ground chicken and they loved them just as much as the originals.

I love lasagna. It reminds me of the birthday parties when my mom had no idea what to serve the hungry crowd so she would either cater or make her own lasagna. She always said it was cheap to make or buy and easy to serve and totally filling. She did not need to buy sides (unless she really wanted garlic bread) and did not need to buy special plates for this. Regular ol’ paper plates would do and really made her life easier.

 

After some time of making regular lasagna, she tried her luck at other varieties. For a while she was making a plantain lasagna which I must admit, was absolutely delicious. That lasagna was layers of fried plantains, white cheese and ground beef. Man, was it good! After a stint making that, she tried a new kind: Mexican lasagna. This was a delicious, hearty and filling meal of layers of Mexican goodness which turned into what seemed like a lasagna. I will admit, it was probably even better than the classic one she used to make. Loaded with cheese, nachos, ground beef, veggies, queso dip and more, you really cannot go wrong with it. This was the dish I have always wanted but never knew about!

Great for when you want a healthy, relatively low-cal, filling homemade meal but are just too busy to spend all day standing over the stove.

I just love a good stew, don’t you?  Done right, it is something light and flavorful enough for a summer lunch and yet rich and soothing enough to warm you up on the chilliest winter nights.

Mother, God rest her sweet soul, frowned on using crock pots.  She insisted on doing everything the good old-fashioned way – and did it brilliantly.  But crock pots have their uses:  Do a small bit of prep the night before; drop all of the ingredients into the pot, plug it in, and just forget about it for eight hours.  By the time evening rolls around, with no further effort on your part, you have a nice, healthy, homemade meal.

If you are tired of falling back on store-bought frozen meals and are looking for a simple way to turn beef and veggies into a tasty dinner, this crock pot stew is for you! Just consider making a double batch… this is so tasty it will be gone in the blink of an eye!
