Oh, the weather outside is frightful…and that means we make soup!

As a kid growing up in Michigan, hot soup was a staple meal that my mother would often make. You could always count on her having a massive pot of the stuff simmering on the stove. I loved all of my mom’s soup recipes. Rockin Robin Cooks has a wonderful YouTube Channel where she makes a fresh and homemade lentil soup that is chock-full of veggies. This soup is easy to make and reminds me of my mother’s home cooking.

Lately, I’ve been searching for new and fun foods to make as I always seem to prepare the same things. I am over the moon with excitement that I found Rockin Robin Cooks on YouTube. her channel is FULL of AWESOME recipe videos.

When it comes to side dishesI really am partial to fresh vegetables. I love eating a ton of them with my main meal. Veggies are full of fiber, antioxidants, and flavor. Plus, if you’re trying to watch your weight, loading up on veggies is the way to do it. I always make sure my plate is piled high with veggies and low with carbs. What are some fo your favorite fat-burning foods?

Roasted mushrooms and veggie casserole is very easy to make and you are left with a ton of options. Feel free to get creative with this recipe and use a variety of vegetables that please your palate.

If you’re into one pot meals like I am, this recipe is probably going to make you feel super giddy. Seriously, besides tasting absolutely amazing, slow cooker honey garlic chicken and vegetables is one of the easiest wholesome meals I’ve ever made for my family. Who doesn’t like the idea of throwing everything into the Crock Pot, coming back in a few hours, and chowing down on awesome food? I hear crickets…

This is a meal you’ll add to your meal plan for years to come. The recipe suggests a variety of vegetables to add to the pot, but feel free to toss in whatever tickles your fancy. I used baby carrots, potatoes, asparagus, and added in a few cups of sweet corn. Needless to say, it this dish was a huge success at my dinner table.

Everyone loves Ranch dressing, and sometimes it makes an appearance in the last place you’d think, as a tasty flavorful addition. These pork chops are no different. Not only that, this recipe takes place entirely in 1 pan! I absolutely love one-dish recipes. It makes everything so much easier for me on a busy weekday when I don’t have to worry about a massive clean-up operation.

Ready in about 2 minutes, this recipe serves 4 people generously.  Serve with a side of greens for a full and nutritiously complete meal.  These also make for great leftover lunches the next day – but I have to warn you… This is so delicious it’s going to be gone before you know it. So if you want some of those leftovers, you might want to make a double batch!  Enjoy!

Hey, I am a meat eater.  But I also love my veggies, and I like having a good go-to option that will satisfy me and my vegetarian friends (I have a few).  This fits the bill for a quiet home meal or a bustling event (though you may need to tweak the recipe a bit if you have strict vegans on the guest list).

 

I have a bit of a confession to make: I skip breakfast a lot. When I do eat that meal, I often want something fairly light: enough to settle my stomach a bit and give me a little energy but not enough to bog me down. This casserole is perfect for that. And though it is a breakfast dish, it also works well as part of a nice picnic lunch, when you want something flavorful but don’t want to be feasting on anything too rich while lounging in the sun.
