My brother and his wife are busy people—they’re both lawyers and are always away dealing with their cases. Since I work from home and live just a few blocks away from them, they bring my niece over after lunch and she will stay with me until the next day. She’s a quiet child. As long as she has her dolls, she is happy sitting on the floor beside me and playing. We will have a peaceful afternoon and I will be able to finish all the work I need to finish.

 

Until it’s time for dinner. Then the war between the lovable aunt and the sweet niece will begin. She only ever eats chicken and anything sweet. After that first sleepover without chicken, I learned my lesson and stock up on said meat. But I know I had to find other recipes for her to eat other than fried chicken; it would be a better idea to serve something a little healthier.

This Dish Is Not Only Delicious, It’s Also Good For You!

Boy, am I glad we’re just about done with the Holiday meals! There’s going to be a bunch of leftovers that we still need to go through (who would’ve thought that would feel like a task!) but after that I know I’m definitely going to want to eat a little healthier! I’m not talking about “rabbit food” only, even though I do love a good green salad. I just want to pay more attention to how I can prepare the meals in a healthier, lighter way.

This recipe is a great example of that! I love chicken – unfortunately I often end up frying it in butter or oil, which is delicious but not necessarily good for you. Now, my greatest fear is that trying to prepare healthy dishes would make them dry and tasteless, so I had my doubts when I tried this crunchy baked chicken. I turned out so delicious I knew right then and there that I wouldn’t have to worry about such things!

Every single time we go to an Italian restaurant my family orders the exact same thing: Chicken Parmesan. It is always exactly the same. Two people share one dish of spaghetti, one chicken breast coated in red sauce and covered in melted cheese and then a side of 2 garlic rolls. I think it is pretty crazy honestly with all of the options on an Italian menu, but my dad especially absolutely loves it. He will never switch up his order and he never gets bored.

 

I recently was planning a family dinner and was wondering what in the world I should make my family. They are somewhat picky and with a family of eight, it has got to be something easy and totally do-able in a pinch. Most of the times when they come over it is after church so I do not normally get a lot of time between services and them coming over to cook. That is when I figured I would try a recipe for slow cooker garlic parmesan chicken. It is exactly what my family loves and yet at the same time, I barely have to do any prep. The ingredients are simple and the steps even simpler.

So every year on Valentine’s Day my husband cooks me a meal. Yep, he only cooks once a year. I do not mind it at all because I love to cook, and honestly, I usually have to be held back in the family room so I don’t get in the kitchen and ruin all of his plans. It is quite funny to watch him stumble in the kitchen a bit when he can’t find certain utensils or the ingredients he needs are nowhere in sight. I usually have to pop in and give a few directions, but for the most part, he handles it all on his own.

 

One of my husband’s favorite things to do is use up ingredients that are left over or weird or we wouldn’t use for a certain meal otherwise. Last year, my husband had found a box of leftover Ritz crackers and decided he wanted to use them. He crushed the crackers, added some salt and Italian seasoning and then dipped strips of chicken into milk and then added a thick coat of Ritz cracker crumble. I thought it was kind of funny and would not be so great, but boy was I wrong about that.

Chicken noodle soup was one that I used to detest. Of all soups, this one was the worst in my opinion. One day I tried the one at Panera and once again was dissapointed. It felt like a cup of hot water with floating noodles. How is that even filling? Mind you, there was not even one piece of chicken. Blahhh, how boring. Do not worry, I am not a Panera hater, I just cannot enjoy their soups!

 

I used to hate my sick days because my grandma would make me down a big bowl of chicken noodle soup. She says it would be an instant cure, but I never really believed her. However, fast forward a bit to when I got a bit older and I realized that she was right. I got sick like never before and cured myself by drinking bit bowls of this. I was desperate, that is what made me. And the recipe I used was this one. It is the perfect amount of soup to chunks in it and has just enough noodles and chicken. This one is perfect to nurse someone back to perfect health. After you try this one, you will not go back to any old recipe.

One of the things I love to do is try to recreate the dishes that my family finds most enjoyable when we eat out. I take it a step further by trying to recreate the recipe on a budget. One of the most challenging, but most rewarding, recipes was this cast iron buffalo chicken and bacon pizza. The original recipe was found at a local pizza restaurant in Alabama called Buck’s. We tried it while I was pregnant and it took until my son was 3 to nail all the flavors.

 

Though I am sure it is not 100% identical to the amazing pizza we first tried in that sleepy Alabama town, it comes very close. You can create this yourself with a cast iron skillet, chicken, bacon, and a few other key ingredients. The prep time takes about 15 minutes and the cook time takes 30 minutes.

Quick Tip: Don’t use a traditional buffalo sauce of hot sauce and butter. The butter will cause the pizza dough to be damp and mushy and give a raw feel to the pizza.
