We Cracked The Code! This Is The Most Amazing Way To Cook Roast Beef

I had an awesome roast beef recipe that I used to make for Sunday supper, once a month. It was a recipe my aunt gave me years ago; she said she had found it in an old cook book and thought it was scrumptious. And it really was – I thought it was the best EVER and there’s no way anything could ever top that one. But then our neighbors invited us over for dinner.

Kristen, my neighbor, had made roast beef with baked potatoes and as soon as we stepped in, the aromas nearly swept me off my feet. I asked her if she had a family recipe for it but she kind of just shrugged and said; “No, I just found this one online.”

The meal was out-of-this-world amazing and I’m not even ashamed to say I forced her to give me the recipe immediately. She was more than happy to do so and, of course, I immediately saved it in my stash of favorites when I got back home.

You Won’t Be Able To Put Your Spoon Down

You know what I love about fall, the most? Granted, I enjoy the cool, crispy weather and all the bright colors of this season, but my favorite part of autumn has got to be the food. It’s not like I have a completely separate recipe book just for fall, but I tend to go for all kinds of soups and stews this time of year – even if the weather is still warm!

This slow cooker recipe for beef and noodle soup has been in my Top 3 for years now! It is ridiculously easy to make, the ingredients are very inexpensive, you can easily feed a large crowd – AND it tastes amazing. That’s pretty much every box ticked, for me!

On top of everything, this is one of those meals even my picky eater devours so fast, my jaw drops. It’s literally the only soup he loves enough to get seconds – so, obviously, I’m making this pretty often. And I have no problem with that! This recipe is incredibly versatile and just by using different kinds of noodles, you’ll make it look fresh and new each time.

How To Take Your Homegrown Tomatoes To The Next Level

I had always thought it would be really difficult to make your own spaghetti sauce. I don’t know why – now that I’ve tried it, I know it’s not even close to rocket science, haha! I guess I just thought it would be so much work, trying to peel and chop all those tomatoes in order to get a smooth consistency for the sauce. I couldn’t have been more wrong!

Sally, my next door neighbor is very much a DIY person and when she mentioned she had just whipped up a batch of spaghetti sauce, I had to ask her for the recipe. She told me about blanching the tomatoes (how is it possible I had never heard of it before?) and how it makes the whole thing super easy.

All you need to do is boil some water in a large stock pot and then put the tomatoes in the boiling water for a minute or two. Then remove them from the stock pot and put them into ice cold water; this will make the skin crack and peel almost on its own.

The easiest way to make dinner for the whole family.

I enjoy cooking fancy and festive meals for friends and family. To me, it’s a wonderful way of showing them that I really care about each and every one of them.

I really care about my husband and kids, too, but to be honest with you, on weeknights my meals tend to be a little more casual… Long workdays and schooldays, hobbies and house chores – there just aren’t enough hours in a day to slave away in the kitchen every single night! Thank goodness for my crock pot!

When I got my first slow cooker it was like a gift from God. It made my life so much easier, and I didn’t have to worry about all the hassle that usually comes from making dinner. I collected a good bunch of crock pot recipes and I was good to go!

Over the years I’ve gotten another slow cooker, as well. It’s awesome – I make the main dish in the large one while the dessert is cooking in the other one! My collection of recipes is pretty impressive these days, and this slow cooker chicken meal is one of my family’s favorites.

Once every two weeks or so I get a request from my little one to “please mommy make the cabin dinner again”

The first time she said that, I had no idea what she was talking about. I mean, sure – the meals I make are not exactly Michelin star restaurant-style, if you know what I mean, but I wouldn’t actually call them cabin meals, either. To me it sounded like something that comes out of a box when you’re on a flight to a tropical destination. And NOT in first class.

After a couple of questions I was able to find out it was cottage pie she so desperately wanted me to make! It really has become her favorite meal, and whenever we are having mashed potatoes it goes without saying that there will be cottage pie the next day.

Sometimes I even have to make mashed potatoes just for this dish – I don’t mind, because I see how much she loves it. I’ve tried several recipes and this one never fails. I would highly recommend making a double batch – you’re going to want to have some leftovers for lunch the next day!

Long gone are the days of baking a full chicken in the oven. Sure, it always works, but you have to heat up the whole oven for a long time, which at least in my case practically heats up the whole house, until the chicken is fully cooked. It is a waste of electricity to have that running for so long and it really makes my A/C run far too hard. So, instead of giving up on making whole chickens, I found a neat alternative.

 

One day, I lined my crock pot with parchment paper, greased it and put a full chicken (perfectly seasoned with loads of garlic and all my favorite spices). I let it sit there on low heat for the whole day. I went off to work and when I returned. Oh. My. Gosh. The house smelled AMAZING! Not only that, but my house was not scorching hot. It was perfectly warm and cozy, smelling great, and when I lifted that lid… ooooh yes! It was filled with a juicy and perfectly cooked full chicken. It had become a beautiful golden brown color and nothing (not even the wings!) burned. It was the perfect dinner and was so easy to make. I whipped up some rice and we were eating in no time!

This Dish Is Husband-Approved And Kid-Friendly!

When I was a kid, we had pork chops almost once a week. They were inexpensive, simple, and easy to cook for a larger crowd since there were so many of us. Not to mention it was my Dad’s favorite dish! My Mom used to always cook pork chops in a cast iron skillet on the stove top. Then she used the drippings to make a delicious gravy. I really loved the dish, too, but now that I’ve tried this one I must say this is probably even better!

These pork chops are possibly the most delicious ones I’ve ever tried. The best part is, you only quickly cook them on both sides in the skillet, and the oven will do the rest for you. They turn out really moist and tasty, and they don’t even necessarily need gravy to go with them. My favorite way of serving these is with mashed potatoes and steamed vegetables!
