Have you been searching for the perfect Mexican-inspired chicken recipe for your taco tuesday’s?  Well, even if you haven’t, I have a recipe you will want to try tonight (even if it’s not Tuesday!).  This recipe includes classic Mexican flavors in the juiciest chicken you have ever tasted in your tacos!  After trying this, you will never go back to plain chicken for your Mexican inspired dishes.

The day I first tried this recipe, it was Cinco de Mayo and I really wanted to eat Mexican food.  My husband is not a fan of Mexican, but he indulged me because he knows how much I love it.  And it was so absolutely worth it.  He loved every bite and even asked for more!  There was nothing left on the plate and he was ecstatic about having it again the following day.  That’s how good it is.

Growing up, I had split pea soup for dinner every day.  It was my grandmother’s recipe and she served it to me every single day.  Over time, I got so bored of it and vowed never to make it again.  That is, until I got married and found out split pea soup is my husband’s favorite soup.  So here I am, having it for dinner quite often, but I’ll tell you, I don’t regret it at all.

This soup is even better than my grandmother’s recipe and it brings back so many wonderful memories.  I love making this on a rainy day to cuddle up at home and sip on while watching a movie.  This is also a family favorite, because everyone who has tried it, has loved it.

Sometimes I want to try to eat healthy.  That becomes really difficult when you love food as much as I do.  However, I have found there are ways to alter a recipe so it works in my favor when I’m trying to be healthy.  This is one of them.

Instead of layering on the bread with my burger, this casserole allows me to enjoy all the deliciousness of a juicy burger without adding on all those extra calories.  This casserole is as good as it looks and is wonderful to indulge in when you’re craving something hearty.

I love chocolate and peanut butter more than any two ingredients in the world. Combining the two of them together makes the perfect dessert combination, in my opinion. That’s why my famous peanut butter melt away cake recipe is one of my most prized possessions.

This cake is definitely tops! You have a smooth layer of chocolate sauce on top with a decadent peanut butter sauce below. It’s like heaven in a pan. I enjoy making this cake for potlucks, parties, and picnics. Everyone that has ever tried it has always loved it…except for that guy with the peanut allergy. I kid, I kid! But he almost ate some until his wife was all, “There’s peanut butter in that!” Needless to say, it all worked out, and I got an extra slice.

Quick Tip: This cake works well as a birthday cake for the chocolate peanut butter lovers in your life.

One of my favorite candies during the holidays is homemade chocolate peanut butter fudge. I could eat an entire pan of this stuff by myself. However, I have to have some level of self-control, or my pants wouldn’t fit me anymore.

There are times throughout the year that I seriously crave fudge but don’t want to go through all of the hassles of making it. You know, the cooking, the stirring, the dirty pots and pans to scrub. What’s a girl to do when it isn’t Christmas, and she’s craving fudge? Make my recipe for uncooked fudge, of course! You guys are going to love this.

Quick Tip: Just because it isn’t Christmas doesn’t mean you can’t wrap this lovely fudge up and share it with your neighbor 🙂

Throughout the week while my husband is at work, I tend to get huge pizza cravings.  Sometimes I oblige and get some “fast food” pizza or I’ll pop a frozen pizza in the oven.  However, I really wanted a while pizza recently and I couldn’t find it anywhere.  So I decided I had to find a recipe to make my own.

This pizza is so unbelievingly simple because the toppings are ingredients that are found in any typical pantry.  You can probably find the ingredients in your kitchen right now. Give this pizza a try, you won’t regret it!

Nothing makes turns a frown upside down like a warm and flaky pastry. Whenever I’m feeling a little grumpy, making something sweet in the kitchen usually pulls me right out of my pity party. This peach pie and super easy to make and tastes absolutely wonderful, especially if you use fresh peaches.

If you don’t have fresh peaches on hand, don’t let that discourage you, canned will work just fine. I love the way this pie looks when it’s finished baking. Mounds of pretty peaches nestled on top of a buttery pie crust. Mmm, so good! It takes all the willpower I can muster not to dig into the pile of peachy goodness before it cools.

Quick Tip: Add a dollop of whipped cream to your pie for a bonus of sweetness.
