Graham Cracker, marshmallow, SMore, Vanilla Ice Cream

Especially during the long winter months, how can you resist the opportunity to make some melty s’mores all from the comfort of inside your kitchen?  Not only that, this twist on the classic, is cleaner and easier to eat.

This recipe makes about 4 servings and is ready in a little over an hour.  Serve after a dinner of burgers and fries, and reminisce about next summer’s BBQ’s.

Many people have sweet potatoes as a side dish at their Thanksgiving table. This recipe combines the common cooked side dish, stuffed with the insides of a pastry. I know it may sound odd but, believe me, it is a stuffing straight from heaven! This is the kind of candied combination you’ll be thinking about long after the holidays, so you’d better bring it into your dinner rotation and serve it year round!

The official name of the dish is “Stuffed Sweet Potatoes with Pecan and Marshmallow Streusel.” The combination of flour and brown sugar form a crumbly crust, like that of a Streusel. When the marshmallow melts over the buttery spud, you’ll have a sweetly sinful take on a classic holiday dish. While this recipe is for a larger crowd, you’ll probably wish you had made a double batch, anyway. They are simply so delicious!

These Pumpkin Spice Rice Krispies Treats are a festive, kid-friendly sweet snack with just the right flavors for fall – or any time of year! If you like the flavor of pumpkin and of the original Rice Krispies treats, you’ll really enjoy this variation on the classic recipe.

What a great idea for any party or family gathering! I think, if I had been introduced to the great flavor of pumpkin this way, I would have warmed up to the idea of pumpkin-based desserts a lot sooner than I did. And hey, you only need half a dozen ingredients to make these festive, low-hassle treats. There is no doubt in my mind that I will be making these again. I brought these to my nextdoor neighbor’s daughter’s birthday party, and soon all the Moms were begging for the recipe!

Quick tip: Let the pumpkin puree dry on a cloth before adding it – this way you’ll make sure the treats won’t turn out too moist.

This Rice Krispies Ice Cream Sandwich is a nice combination of two sweet snacks loved by children (and children at heart) of all ages.  Who doesn’t love that nice blend of sweet, creamy, and crunchy? This is the perfect treat for all the people who like a bit of sweetness in their lives every now and then, but don’t always have the time to fix something up. Just make this ahead and leave it in the freezer!

I had plenty of Rice Krispies treats growing up, and more than my fair share of ice cream sandwiches, but I never had the two put together. I don’t know why, since the combination seems like an obvious winner! That is a great part of working with food, though:  I get to sample things that I otherwise might not have the excuse to make.  I think that you and your children will love these – I certainly did!
