You Won’t Believe What’s In These Meatballs!

Boy, have I had a busy week! Work, appointments, trying to keep myself in shape, and even some surprise guests have kept me busy. I’ve barely had time to cook anything for my husband and I – and I will admit I have even missed a couple of dinners and decided to get take-out instead. However, I hate using lack of time as an excuse to eat junk food. That’s why I have focused on searching for quick and easy recipes lately, and I’m going to share some of the best ones with you.

Today I decided to give you a recipe for one of the easiest and tastiest meatballs I’ve ever come across! You won’t have to bother measuring this and that to put everything together – not at all. Just throw all four of the ingredients into a bowl, mash’em up, scoop, and fry. It really is that simple! My favorite way of serving these is with garlic mashed potatoes and some steamed vegetables. Of course, if you have a favorite recipe for gravy, that’ll be perfect for these, as well!

This Tasty Salad Will Easily Feed A Crowd!

Whenever I’m throwing a party I always struggle trying to find a simple, inexpensive dish that will feed a large crowd.

I love all kinds of tiny appetizers, but I’ve noticed the ingredients can be on the expensive side. And quite often they are also pretty time consuming to put together. Lately I’ve started to turn more towards nice, festive salads and they have proven to be a hit every time. So that’s what I had in mind when I started searching for a new recipe for an upcoming get-together.

This Mexican-style pasta salad is a winner! It won’t brake the bank, and the recipe makes 16 servings (which is plenty, even if your guests are going for seconds – which they will…) This salad would also make a great lunch on its own, when served with some fresh baguette and garlic butter. Bring some Mexican flavors to your next party!

Every now and then I run into a recipe that makes me laugh. And I mean that in the most positive way. This recipe is one of them! How could you not laugh at sweet treats that look like monkey poop? To be honest with you, I have no idea what real monkey droppings look like, but I would assume the description here is pretty accurate. Actually, now I’m so intrigued I may have to Google it later on, haha!

 

Whether these banana and peanut butter sweets look like the real thing or not, they sure are delicious! And compared to many store-bought treats these are also much healthier. No processed sugar, mashed bananas and unsweetened coconut flakes – such lovely flavors that are perfect for freezing. Oh yes, I haven’t even mentioned that you’re not going to have to bake these! These would make a lovely party treat, and they are so much fun to make together with your kids.

Sitting at my table and sipping on some coffee the other morning, I came across the verses in the bible that talked about the Children of Isreal eating the manna that fell from the sky for 40 years.

Can you imagine that happening today? God literally rained down manna for his people to eat as they wandered the wilderness. It wasn’t until they reached the Promised Land that the manna stopped falling from the sky and then we can only speculate the amazing feast that they got. I bet the manna tasted amazing. I mean, after all, it was made in God’s own bakery. How cool is that?

Anyway, when I cook I like to put lots of love and effort into my dishes just like God did when he fed the Children of Isreal for 40 years with heavenly bread. I came across this lemon pepper chicken recipe the other day and although it isn’t manna it’s a very good meal. As I prepared it for my family I made sure to take extra special care in seasoning the chicken and making the side dishes as I reflected on the Children of Isreal and their manna. Which Bible verses do you ponder while cooking for your family or yourself?

Chicken This Tasty Must Be Illegal!

If there’s one thing I’m grateful for, it’s that I have been fortunate enough to visit Hawaii. It took a lot of planning and saving but it was so worth it! What I’ve noticed later on is that it’s impossible to explain the aloha to someone who hasn’t been there to experience it. I guess you could say it’s every single positive thing you can think of put together, multiplied with love and then divided by the amount of people living on the islands. I’ve never felt so welcome and so at home before, or since, during my travels.

However, there is another thing about Hawaii that I can make people understand, and that’s food. Oh my goodness, it’s so delicious! Hawaiian cuisine, just like the people living there, is a mixture of different cultures and tropical flavors. The ingredients are fresh and tasty, and every meal makes you feel like it’s the best thing you’ve ever had in your entire life. That’s why I had such high hopes for this recipe – and I certainly wasn’t disappointed when I tried it!

I love budget-friendly dinners! I grew up in a home where I learned to appreciate everything I had. My parents were farmers (we had a very small farm) so from the early years of my life, I learned what it took to provide for a large family. I also learned that a great meal, or a great life in general, is never about how much money you have and how expensive things you can buy. Even when I have some extra savings, I like to purchase inexpensive things and keep the money in my bank account for something special.
