As much as I love Mexican food, I have a soft spot for Italian meals. I love the taste of pasta loaded with lots of creamy sauce. I love chopped chicken or meatballs that are the perfect size to pop into my mouth. Oh and let’s not forget the garlic bread! Any of these combinations I will take at any time of day. They are fun and delicious and you will be thrilled to have them for dinner.

 

The other day, my neighbor Anne came over my house lugging her slow cooker with her. It seemed hot and like it was full of food. She is usually the crazy one who will bring her food in a slow cooker instead of transferring it first so as not to burn herself. But anyway, she brought over her crock pot full of manicotti. Yeah, I know it is a weird place to prepare it, but the reason she brought the entire crock pot over was to prove that she had done it in there. I was shocked when I had a taste. It seemed too good and sophisticated to have been made in a crock pot, but there it was. That amazes me! She is so awesome at this stuff!

I am not a veggie person. Never have been, and I never will. At least I think I will not, anyways. Well, my husband is. He loves a good hearty serving of veggies with every meal I serve. Pasta? He wants some broccoli. Mashed potatoes? He wants some corn. Burgers? He wants a good side salad. Anything I can make, he wants a side of veggies with.

 

That is why I learned to put together dishes that require veggies to be put together with the meat immediately and all cooked at once. It saves me time and makes less mess and I absolutely love how easy it is to put together. My husband really loves dishes like this, too. If he had to choose, all his meals would be one pot meals where all the food is mixed together into one big hearty mess! That is his cup of tea, and still not mine, but I will make it for him often. I have grown to like dishes like these, thanks to recipes like the one I am sharing with you today. I love that it is a big pot of veggies with meat. It is easy and delicious.

About 7 years ago, my sisters and I opened a bake shop called Sweet Cakes by Vivi. We could not decide what to name it, so we named our company after my youngest sister who would not be a part of it at all because she was too little. We slowly grew our company and began working a lot more. We made thousands of cupcakes at a time for school bake sales and fundraisers, we made wedding cakes and we made hundreds upon hundreds of cake pops for a fancy nautical party. We had a blast doing that!

 

Now, when we made wedding cakes, we could not get too creative and had to stick with something that was easy, classic and very delicious. We never wanted to let a bride down. So we created our own recipes for classic vanilla, chocolate and strawberry cakes for weddings. Our favorite to make were sheet cakes. Those were easy to work with and helped us make any shape the bride wanted her cake to be. After years of playing around with recipes, we found the perfect cake: this classic chocolate sheet cake. It is easy, delicious and makes a ton, so grab a friend to eat this with you!

Mexican food is my favorite. Yep, I have said it before, I will quickly betray my Cuban roots to enjoy a nice big plate of Mexican fajitas or a burrito. I love how the spice in it adds just the perfect amount of flavor and even more than that, I love preparing my own tacos. That is one of my favorite reasons for enjoying fajitas. I am able to fill up my taco with just enough of everything I like. I create the balance and the mix and the flavors. It is awesome to be in control like that.

 

After eating fajitas at all the restaurants known to man in my area, I knew I had to start making them at home. My only beef with it was that fajitas stink up your hair. And badly. They stink up your clothes and everything and I figured it would stink up my house, too. That is when I found this recipe for slow cooker fajitas. It makes it easy and completely clean in my house to make it. And the smell is just good enough to know I am making food without stinking up my house. That is just how I like it!

I first tasted lamb chops in middle school. We had this cooking class and we were divided into groups. I was put into a group with no sense of food adventure so we had to do burgers. The worse thing was; we had to use frozen burgers instead of making them by hand because my groupmates were all lazy. The first group to do a live demo in front of the class had lamb chops as their recipe. I couldn’t exactly remember what they did because I was too busy grumbling on the sidelines. All I could remember was the delicious smell that wafted inside the room, making everyone hungry even if everyone just ate lunch.

 

I remember my Dad telling me once that lamb meat has that certain smell that isn’t very tempting. So I was surprised that it has “an aroma” instead of “the stink” that I was expecting. When I was offered a piece by the group, it also tasted very delicious. They just fried it; but it was really tender and moist. The flavor of the lamb was so distinguished that even with the seasoning, it stood out. This recipe that I found bakes the lamb meat instead of frying it. But even with different methods, the taste of the lamb still stands out.

Well-kept family recipe secrets are the ones that can be cooked without the need of modern equipment. These are the ones that were made in the kitchen a long time ago and are still being made today; probably with simple tweaking, but still the same recipe. My grandmother was able to pass a few of her recipes down to my mother and her sisters. They own have their “grandma’s recipe” specialties that they bring to get togethers just to honor our grandmother. One of my favorites is the cream cheese chicken that the youngest of my aunts specialized in.

 

It was a comfort dish that everyone loved in their family. My mom and her sisters all had their favorites from grandma’s recipes, but this one was something that they all agreed upon. There’s chicken cooked with creamy white sauce—it was the perfect way to cross the bridges between people’s taste buds. This dish that I found while I was scouring the internet with chicken recipes reminds me of that dish of my grandma. There are a few differences in the ingredients, but when I tried it, it tasted the same. It has that modern twist to it, but that homey taste didn’t vanish. It’s still there, always reminding you of home.

If I asked you what your comfort food was, you would probably tell me the name of some kind of pasta or cookie.
