Don’t let the long ingredient list scare you. There isn’t anything overly involved here. The glaze and fillings are made simply by mixing all of the respective ingredients together in bowls, and after that, it is just a matter of getting all of the layers in order.
I loved all of the different textures, the sweet and piquant mix of apple and cinnamon, and that simple glaze at the top to put it all together. Though it is optional, I strongly recommend serving individual servings with a bit of ice cream; that mix of crunchy and creamy is just out of this world. Enjoy!
Ingredients
Apple Filling:
⅓ cup brown sugar
1 teaspoon ground cinnamon
2 apples, peeled and chopped
½ cup chopped pecans
Cream Cheese Filling:
1 (8-ounce) package cream cheese, softened (I used Philadelphia)
½ cup sugar
1 teaspoon vanilla extract
Apple Cake:
⅔ cup white sugar
½ cup butter, softened (I used Land O’Lakes)
2 eggs
2 Tablespoons oil (I used LouAna vegetable oil)
1½ teaspoons vanilla extract
1½ cups all purpose flour
1¾ teaspoons baking powder
¼ teaspoon salt
¾ cup milk
Vanilla Glaze:
¾ cup confectioners’ sugar
1-1/2 teaspoons milk (adjust as needed for best consistency)
⅛ teaspoon salt
¼ teaspoon vanilla extract
