Move Over Peanut Butter – There’s a New Tasty Spread In Town!

How many of you have tried making apple butter at home? I bet almost all of you have! I’ve made a batch or two over the years, myself, and my whole family enjoys it. This year, however, I felt like trying something different. I still made a small batch of my traditional apple butter but I think this pumpkin spread turned out even better!

Funny how I had never even thought of preparing pumpkin this way before. It makes so much sense now that I’ve tried it! The consistency is perfect, so is the flavor – and you can of course tweak it to your taste.

What’s special about this “butter” is that there’s ginger and honey in it. I think those two give this such a wonderful flavor that it’s impossible to resist. I love having this with my morning toast – and I actually even add this to my oatmeal! I wonder if people would think I’m weird, if I just had this for a snack, straight from the jar with a spoon? Haha!

Store Bought Is Not An Option Anymore Once You’ve Tried These!

When I was little, my mother always brought a can of pickled pumpkin to the dinner table. It was an easy and super delicious little side to any meal – definitely one of my all-time favorites! Somehow, though, by the time I had started a family of my own, I had completely forgotten about pickled pumpkin until my sister mentioned it during a phone call.

I immediately knew I had to make these! I had always thought it would be difficult but it turned out I was totally wrong. This is super easy! I used two whole pumpkins and got a bunch of very pretty glass jars – I’m thinking of giving some of these as presents over the holidays. Unless I happen to eat all of them myself…

You can tweak the seasonings if you’d like, but I thought the recipe was perfect just the way it is. The ginger and cinnamon give the pumpkin a wonderful new flavor. You could decorate the jars with pretty ribbons and include these in your basket of homemade gifts!

I’m sure we all feel that our grandmothers are the best cooks and bakers the world has ever seen. There is something magical about their cooking, isn’t there? They hardly ever use any special ingredients, just the very everyday stuff you can always find in your pantry. My grandma was just like that. She lived to be 97 and I know she saw some hard times, too, so that must have been one of the reasons why she learned to be very creative with her recipes. That Fluffy, Creamy Frosting Is Better Than ANY You’ve Ever Tried Before

I didn’t know it was possible to get tired of your favorite cake in the world but, ladies and gentlemen, it happened. I am still in shock and I think I may need therapy. It was a couple of weeks ago when I made the chocolate cake I had LOVED for years, and I thought, “this doesn’t taste as good as it used to”. Seriously, I had over-enjoyed that recipe!

Lucky me, I had already set my eyes on an amazing cake my friend had made for her daughter’s birthday party. It was so delicious, I just had to ask her for the recipe. And since my old favorite didn’t seem delish anymore, I grabbed my apron and got to work last weekend!

Boy, am I glad I did because this turned out amazing! The cake itself is totally scrumptious, but that special frosting will make you slap your knees – or maybe even your momma! Who would have thought a little bit of mint could make such a huge difference?

Soups have never been my favorite foods.

As a kid, I loved mashed potato or mashed yucca, but turn that into a soup and suddenly I did not want it.  It was unappealing to me and I felt like a bowl of watery food was not a real meal.  It was so hard for me to drink soups after I got my wisdom teeth removed and every time I got a cold.  I just felt constantly hungry, although I think it was more of a mental thing than anything else.

After some time, I learned to appreciate the finer things in life, also known as soup!  It became a nice treat to walk into my home after a long day of school to find a nice heaping pot of soup on the stove just waiting for me.  And after being married and talking about food options with my husband, I realized he loved soup, especially after a long day of work.

He thought it was a perfect finish to a long and stressful day and honestly, it truly relaxed him.  It has become a tradition in our home to make two to three different soups per week.  And now, we have found a new favorite.

Back when we were kids, whenever Mom announced that we would have roast beef, my little brother and I acted like the most behaved kids in the neighborhood.

My brother would always volunteer to set the table. And I, who has a deep aversion to washing the dishes, always volunteered to wash the dishes after dinner. We also didn’t make any noise and just quietly watched our Mom make the best roast beef in town. Dad would be there in the kitchen too, sitting at the head of the kitchen counter, behaving himself. Mom always knew she had us at the palm of her hands whenever she mentioned those two words.

And oh boy, how she took advantage of it. She would make Dad her kitchen assistant and we would get no complaints from him. She would ask my brother and me to run errands around the house, and we wouldn’t complain. As long as we got to have seconds of her roast beef, we would do anything. That’s how much we loved it.

I will go ahead and say that I am probably biased, but Mom’s roast beef is the best roast beef that I have ever tasted in my entire life. I haven’t eaten anything that could even be compared. But then again, every recipe of hers was linked to a childhood memory of mine, which probably made it this special.

Another soup recipe, I know.

But we are in the first days of winter and need to be prepared.  In my home, we like to be stocked in recipes and lots of veggies and beans to make a good, hearty, warm and delicious soup.  But these days, we love to change it up every now and then.  In our home, changing it up means using tomatoes for soup.  Weird? Maybe.  But it really is so much fun to switch it up and give us a new treat.

You know what goes great with tomato soup? A grilled cheese.  Last time I went to Panera Bread, I tried their creamy tomato soup with a Big Kid’s Grilled Cheese (that’s off the menu these days- but it’s basically a grilled cheese with slices of bacon inside).  One of my favorite things to do as a kid was dip my grilled cheese in ketchup, but since discovering creamy tomato soup, it is so much better to dip it in a warm brothy, tasteful soup.

The next time I make this recipe, I am going to buy a whole baguette of bread and fill it up with gouda and American cheese and put that in the oven til it is perfectly toasty.  It is the best way to prepare a creamy tomato soup.
