Another soup recipe, I know.
But we are in the first days of winter and need to be prepared. In my home, we like to be stocked in recipes and lots of veggies and beans to make a good, hearty, warm and delicious soup. But these days, we love to change it up every now and then. In our home, changing it up means using tomatoes for soup. Weird? Maybe. But it really is so much fun to switch it up and give us a new treat.
You know what goes great with tomato soup? A grilled cheese. Last time I went to Panera Bread, I tried their creamy tomato soup with a Big Kid’s Grilled Cheese (that’s off the menu these days- but it’s basically a grilled cheese with slices of bacon inside). One of my favorite things to do as a kid was dip my grilled cheese in ketchup, but since discovering creamy tomato soup, it is so much better to dip it in a warm brothy, tasteful soup.
The next time I make this recipe, I am going to buy a whole baguette of bread and fill it up with gouda and American cheese and put that in the oven til it is perfectly toasty. It is the best way to prepare a creamy tomato soup.
